Cooking with our Guests: Eleni's Legendary Traditional Cypriot Pork Sausage Recipe (Sheftalies)

  • Eleni shows us her step-by-step guide on how to make Sheftalies - A Traditional Cypriot Pork Sausage Recipe. They are made with cinnamon-spiced pork mince; a generous amount of fresh parsley; brown onions; dried mint and seasoning, and then wrapped well in caul fat, before being barbecued over hot charcoals. The fat in the caul fat renders out, making the Sheftalies juicy and delicious.
    They can be eaten Cypriot style in a Cypriot pita pocket filled with a dry salad of finely diced tomatoes, cucumbers, onions and parsley; pickled vegetables; tzatziki and a generous squeeze of lemon juice or as is with a salad, roast potatoes and a dip!

    Im an Indian who spent 4 yrs in CYPRUS, but i will say Cyprus is my unforgettable love. The food specially Souvlaki and sheftalies make home in my stomach and brain. I missed sheftalies from my heart. I visited lots of greek restaurants here in US but im unable to find the taste of CYPRIOT food. Cyprus is first on my bucket list.

    I love Sheftali Kebab as a Cypriot myself, have to let you know we need to thank the CHEF who Invented SHEFTALI kebab was named after him ( CHEF ALI ) who was a Turkish Cypriot

    We have just returned from a family holiday to Peyia in Cyprus and the sheftalies were just incredible. The family of the Tavern gave me a few good clues to their ingredients which are very, very similar to yours. They served these with a village salads which was not your typical Greek Salad but very much like the chopped salads you served with your sheftalis. Could you share this salad recipe please. Loved your videos

      Hello Len - happy you enjoyed the video! The salad consists of diced tomatoes, diced cucumbers, chopped onions and continental parsley - it does not have any dressing :)

    The traditional sheftalies never ever had cinnamon in them, and Eleni keep the panna in the water other ways it will dry up.

      Thank you for stopping by Andrea! Given Cyprus' geographical location - in the near epicentre of the Spice Route - I imagine there are sheftalia recipes that include spices. I imagine they are delicious - when made with love and passion - either way! The pana/caul-fat didn't dry out at all during filming - truly!

    There are so many recipes for Sheftalia, I lived in Cyprus for a few years, and saw many recipes. Some use some breadcrumbsm or shredded potatoes, some put cumin in, no wine, I like to use shteddered / grated potatoes, as it tends to make the end product more moist, enjoy them

    I LOVE Sheftaliaa, I'm about to cry, it reminds me of my life in Cyprus in the 80's.
    It's the first time I hear the name sheftal-ies, the Cypriots call them "sheftal-iaa" I guess the ies makes it plural!!! Greeks have no clue what seftaliaa is, I've spoken to hundreds of Greeks in USA when I moved here from Cyprus, and absolutely none of them knows what sheftaliaa is, many of those Greeks are restaurant owners and they all told me that they've never heard of it, not even when they were young, still living in Greece. This all goes back to the early 80's so with the Internet and TH-cam, I am sure the world now knows what seftaliaa is.

      Erm... American Greeks are oddballs! Granted, these are more popular in Cyprus, but most mainland Greeks in London know and love seftalies! They also appear on menus whenever I go to Greece! Enjoy - I did earlier tonight! ;)

      Yes it is plural! Eleni lived in Cyprus for 12 years! It is a Cypriot specialty and yes, mainland Greeks are less familiar with it! Very happy to bring back special memories for you! :-)

    Those measurements are accurate? Cause that looks like a lot more then a tablespoon of pepper and a lot more the 2 tablespoons of salt and the cinnamon looks like a lot more then 2 teaspoons . Only asking because I want to make this same amount of meat. I don’t mean to question you it just looks like a lot more in the video And that’s a lot of meat 3 kg is over 6 pounds. That’s enough seasoning?

      Hello Michael - all the quantities were measured on the day and are correct. When I make these again, I will add a bit more cinnamon, for a little more aroma! Maybe 3 - 3 1/2 teaspoons :-)))

      kaliorexi thank you 🙏🏻 i’m going to try this recipe but I’ve watched several others going to put my own twist on it just a little bit of some other things. Maybe a little bit of all spice and cumin. Other people put lemon juice and breadcrumbs also I’m Italian but I’ve had these before at a friends house whose wife is Cypriot . There from Astoria Queens New York and I’ve always asked about these now I want to make them I’m also going to buy Burkeshire pork from snake River Farms to do it I’m going to grind the meat myself

    This is a Turkish Cypriot dish invented by Chef Ali in Nicosia. He named it Chef Ali kebab when his customers loved it and ask him what it was called. Over the years people started to called this Şeftali kebab as it kind of sounded like Chef Ali. Şeftali means Peach 🍑 in Turkish. So this name stuck with this dish ever since. I cannot believe someone’s trying to come up with a alternative story. This is obviously made up for political reasons as always

      @@kaliorexi this person is going around posting the same comment on every single sheftalies recipe. The dish probably was invented under Venetian rule when French and Venetian nobles ruled the island as the French were renowned for using caul fat to encase meat....

      @@RealOrbit-Australia you're very likely correct. Similar to french crepinettes. Obviously the cooking is done different on a famous Cypriot bbq. Older generation Turkish Cypriots and Greek Cypriot culture is bonded. They're all Cypriots despite terrorism, invasion and political interference.

      @@sebastianmatarelli5602 there was a time when Cyprus was ruled by the Venetians and was also sold to aristocratic French....we have French words in cypriot dialect and this dish probably originated from there. Of course the culture was one and the same. Turkish Cypriots (a lot of them were actually converted Catholic Venetians that "pretended to be Muslims as the catholics were persecuted by the Ottomans as they were the dominant class on the island...they eventually became Turkish cypriots) they all spoke Greek, lived together etc.

      @@RealOrbit-Australia very interesting. Didn't know that about crypto catholics in Cypriot history. One day nationalism and religious zealotry will be put aside and they'll be bonded again. Cypriot history and culture is too rich to be dissolved by seperation.
