This technique applies to most recent iPhone devices. It is unusual for the device to change the exposure after you set it up. Try tapping on the screens and holding onto your subject. Drag the sun icon down to reduce the exposure and lock it.

Tap and hold onto your subject to lock focus and exposure. Slide the sun icon down to reduce the exposure while you are recording the video. :)
Get an older iphone or a camera, cause postprocessing on a newer models is bullshit
is that for pro type only? mine 14+ but the exposure keeps changing

You can't, so it's best to use the exposure slider in the hidden menu instead.
