HP Brown sauce recipe | The best of British recipes

  • Today we will learn how to make a delicious HP Brown sauce. This British sauce is a popular condiment to have on your Bacon sandwich or with a BBQ. However you choose to eat this I know you will love this simple recipe with only a few ingredients needed. It’s easy to make and one of my favourite sauces that remind me of home. So let me know in the comments if you are team HP sauce or Ketchup on your Bacon sandwich.
    Ingredients
    1 small onion
    2 Apples
    130g Prunes
    140g Brown sugar
    Large pinch of salt
    350g Malt vinegar
    A pinch of Pepper Ginger, cayenne , nutmeg ( optional extra a small pinch of garlic, mustard powder)
    A few Tips
    35min-45min Cooking time until the fruit is soft in the pan.
    Taste at the end of cooking and add extra seasoning accordingly.
    (Depending on the size of your apples and onion you might need to add a little more water to your sauce to loosen up when you blend, if you do and then think it is too runny then just pop back on the stove to reduce down. I find each batch I make can be different so just judge by eye your sauce)
    If you would like a bit more spice then just add a little more cayenne pepper.
    Pour boiling water into your glass containers to sterilise them.
    This sauce will last for about 2 weeks but it never lasts that long in our house

    Brown sauce hardly gets the credit it truly deserves. Its a great condiment.

      I agree. As a kid I used to hate it but it is my sauce of choice with bacon or sausages now.

    Sitting here in China, I finished my last bottle of HP yesterday and have just made a batch of this however I did use Arabic dates as listed on the HP sauce bottle and it is perfection! I was going to wait until tomorrow to allow me to buy green apples and malt vinegar but that would have meant no bacon sandwich tomorrow morning so…red apples and cider vinegar. Superb result. Many thanks!

    I am a British expat living in California. Your videos bring our family lots of joy. Thank you! We were a Daddy’s household growing up, brown and red. I’m a veggie but back when I ate meat… ketchup on bacon or egg sarnies but brown sauce on sausage! Also US has A1 sauce which is a bit like HP sauce.

    I have never had HP sauce, though I read that A1 is a passable substitute where brown sauce is called for. I need to find out for myself and this recipe looks absolutely delicious. THANK YOU for distilling the instructions down to a 3 1/2 minute video. I can hardly wait to try it.

    In Canada our HP sauce has dates and white vinegar , I bought the one from UK and I liked ours better I couldn’t figure out what was different but reading ingredient list on bottle the big difference was the malt vinegar , I will make this I will use regular white vinegar , thanks so much I didn’t know it was so easy to make

    It looks so good as having just right after boiling itself before blending. The apple gets special taste, I think. I wonder which flavour it is.

    Great video!! I'm allergic to dates, prunes and plums, is there something else that I could replace it with? Maybe sundried tomatoes? I'm looking up recipes because it's almost impossible to find brown sauce without dates. Great to have the rest of the ingredients and the process 👍

      I use the prunes for sweetness and they also add to the texture and colour, Can you eat dried apricots?Let me know what you do so I can try your recipe please.❤️ I love learning from other people too.

    Hi Auntie A. I love this recipe. Mad a couple of batches of this and have enough bottles to last a few months.
    Quick question (but maybe not an easy one to answer):HP also do a HP Fruit Sauce and been searching everywhere for a simple recipe for that. There are a couple which seem very complicated. Have you ever attempted to make the fruit sauce? I am guessing your recipe could be slightly tweaked to make it more like the Fruit Sauce.

    Hi!
    I wanted to make some brown sauce as I cannot find it anywhere near me but i have a problem I also cannot find Malt vinegar.
    Can I substitute it with apple cider vinegar? Or would it ruin the flavor?

      Apple cider vinegar will also work but just hold back a little on the sugar ( maybe 1tbsp) , as apple cider vinegar is sweet , you can always add a little extra sugar later if needed. Enjoy . have a great weekend.

    I have just made this sauce and it is delicious but it is not exactly like the original as a certain spice may be missing. Of course, I really like it but I am just curious as to what the spice could be as it makes the original HP sauce quite hot, a bit like chili. What do you think?

      Suggest add some tamarind paste and Worcestershire sauce before cooking down for the sour umami.

    I love HP on grilled cheese, bubble and squeak, in beef stews, in some asian dishes, pork chops and sauerkraut casserole scotch eggs, (NEVER on bacon sandwiches!!!!!! :))) )

      You can leave it a while but when I make it in my house we usually eat it up within the first week. I just make sure to let it cool so usually wait 24 hours before starting to use it.I hope this helps:) Have a great sunday.

      Tamarind has a sweet and tart flavour so I use the sugar combined with the apples and vinegar to get close to the same flavour profile. Tamarind is not easy for everyone to get so I did not use:)

    I've followed this recipe exactly how you've laid it out and have to say, this tastes nothing like HP. Honestly, I think you should remove HP from the title and just call it a brown sauce.
    Very disappointed to be honest.
