actually it's not coming from fermented process...Sago is extracted from the sago cycad by cutting the pith from the stem, root and seeds of the cycads, grinding the pith to a coarse flour, before being dried, pounded, and soaked. The starch is then washed carefully and repeatedly to leach out the natural toxins. The starchy residue is then dried and cooked, producing a starch similar to palm sago/sabudana. The funny is Brenabon Soup wasn't even originally come from Manado but from Dutch just like perkedel n some other dishes... n paria kambu, well cant blame them for dislike it...not every one cud handle bitter dish...in south Sulawesi there are few dishes that specifically known for their bitterness n most south Sulawesi people are already get used to it coz they eat it since they were child...paria kambu is LEGENDARY DISH to bugis-makassar ethnicity

Laurence could you try street food behind the Jayakarta?, its one from dishses from West Kalimantan but it tied into chinese ethnic reside there, so bunch of that is having pork inside. but what im recomended is the Ice in there, Red beans Ice its my favorite :)

a tip from an Indonesian. when you eat something bitter like Pare (bitter melon) or Papaya Leaves, DO NOT eat them by a tiny bite, it won't taste good. eat them by a big bite, and you'll appreciate the taste.
