    As a native San Franciscan, sourdough is in my blood. There is nothing better than the smell and taste of hot sourdough bread. Yum, Jeremy!

      Whenever I’m having a hard week the sheer act of baking bread from scratch makes me feel like I’ve accomplished something wonderful and complicated :)

    Love your videos!! Can’t wait to make this bread. Can you give the recipe for the starter? Thanks so much!

    • @pbwithjeremy

      I got the starter from a friend - I've never actually made my own - but there's loads of recipes on line. It's basically just flour and water over and over again until it gets yeasty....

    Hi Jeremy. I am just wondering how you store your bread and how long it generally keeps.

    • @pbwithjeremy
      @pbwithjeremy  11 หลายเดือนก่อน

      I wrap it in a cloth and leave it out on the counter. It rarely goes bad before we finish a loaf. It lasts at least a week.

    Hi Jeremy, do you use all 100% whole grain flour in your sourdough or is there some white flour as well?

    • @pbwithjeremy
      @pbwithjeremy  ปีที่แล้ว +1

      Yes I do! Pure whole wheat for me :)

    Really enjoyed your video on sourdough ,just wondering about the rrecipe so for 450 gr of flour what is the exact grams of water you used ? And do you use bread flour ? Thx

    • @pbwithjeremy
      @pbwithjeremy  ปีที่แล้ว +1

      In the description should be a link. But for a loaf that’s 450g of flour I would use 300g of water and 100g of starter. Does that help ??

      @@pbwithjeremy yes that helps thx . And do you use ww bread flour ?

    • @pbwithjeremy
      @pbwithjeremy  ปีที่แล้ว

      Yes - sorry I forgot to answer that part. I just use straight up whole wheat flour. But you could use a whole wheat bread flour if you wanted

    Jeremy I have two questions for you. I've made sourdough years ago but gave up because all other instructions said I had to feed the darn thing every few days and then toss a certain amount. I hate waste so finally quit. But I love that you say you keep that small amount and only feed it until the night before you need it. Question 1: Do you keep your starter in the fridge while it's not being used? Question 2: When you feed your starter I'm assuming you're adding both flour and water to the starter? or do you just add the flour to the starter and use the water the next day when you make the bread?

    • @pbwithjeremy
      @pbwithjeremy  ปีที่แล้ว +2

      Yeah - you don't need to feed it daily unless you're baking with it daily.
      I leave mine in the fridge an I bake from it about once a week. If you're going to leave it in the fridge without baking longer than a week and a bit then consider taking it out, feeding it, and then discarding a bit (or just cooking it on a frying pan it as a quick bread - add some seasonings), and putting it back.
      To feed it I just usual equal weight in water and flour for whatever the amount of starter I need for baking is. For example - for my bread I make I need 100g of starter, so I feed it with 50g of water and 50g of flour and mix it together. Easy peasy!
      Let me know how it goes for you!

      @@pbwithjeremy I really appreciate you getting back to me on this. I'm definitely going to get some starter going and give it a try. Oh, and clever use of discard -- don't know why I never thought of that way back when.
