Exactly the way I remember my mum use to make it by whipping/frothing egg whites and I thought she was the only one - compared to others who just seemed to sloppily whisk a couple of eggs together and throw it all in like some slop and no love, and turned out rather flat looking and not as appetising.. Well done!

Just made this, it's delicious, always loved it growing up, but never attempted it myself. I recommend it, so simple and great taste, we like to add a bit of chicken in ours too!

how long does it last in the fridge Please?
We never have any left to put away because we eat it all! But I wouldn't keep it in the fridge very long. A few days. You could freeze it though.
