I know how good this was. Back in the day our Sonny's BBQ would smoke deer meat for 24 hours for the customers for $20. I bought a deer butt and smoked it for Thanksgiving. My family went nuts for it. So tender And tasted like ham. Really miss my hunter friends😥good video, never stop hunting 😁👋 later

Ibwas always under the impression cold smoked meat needed cooked before consuming. Have you ever done brine curing and cold smoked whole deboned deer hind?

Micah , I was thinking (always thinking of how to get more than one use out of something..) when you soak the raw deer meat in the salt to pull out its juices , instead of tossing the remaining salty juice , could you put that juice in a large iron skillet and slow cook/roast it on a warm spot of your woodstove , to evaporate out all the juice , to leave behind a fine salt ? .. Would it be flavored enough with "roast deer meat flavor" , to use it again as a dry salt , but now as a seasoning salt ? ............. "Deer Salt"

Just salt. No nitrates or nitrites…… just dehydrated food grade salt.

I don’t recommend hot smoking this deer ham at all….. cold smoke only.

Cure it in salt 24 hours per pound, smoke it for 24 hours…… at that point it’s ready.

No I have not. I try to separate the muscles to avoid the sinewy aspect. I have however done one with hot smoke and it was pretty good!

It never gets any heat. The salt cure and cold smoke are all that it gets…….. it’s so much better that way!

I’ve never put a thermometer in there…… I only cold smoke, so the temperature stays as low as possible.

What can you do with the used salt?
Reuse it till it gets hard as a brick, then use it as a salt lick or do what I do, use it as a weed and invasive shrub killer.

What kind/brand of salt are you using? Have you tried this with brown sugar in the deer too?
I use tru flo salt by USC….. I get it at my local farmers Co-Op. I’ve only used sugar in pork ham, but I’ll definitely try it on deer!

Approx 24 hours…. It’s really a matter of personal preference. Try it for different amounts and see what you like best!

In a refrigerator it would keep for months maybe longer. I’ve got mine outside in my screened in kitchen and it’s just fine after two months!

Mainly in cool weather. In warmer weather we hot smoke for immediate consumption or to be frozen fully cooked.

Cold smoke only…. If it cooks, it gets very very tough.
