Hope you had a Great Christmas! I have never used a pellet smoker. So it cannot produce smoke at higher temperatures? Is that the reason for using the smoke tube in addition? Ham looked awesome! When I could eat it Honey Glazed was always the way to go!
We had an awesome Christmas and I hope you did as well. All pellets smokers do an awesome job at producing smoke as long as you keep the temp around 250 or less. I was crunched for time so I used the tube half full so I didn't over do the smoke as it makes clean smoke. I ran the temp on the PitBoss at 300deg. In this cook, all I was doing was re-heating the ham as it was already fully cooked when I bought it. Learning curve with cooking with a pellet smoker but they are for the most part, set it and forget it cookers. If you get one you will;l love it!
