I'm guessing he's doing something similar to roast potatoes where it's standard to boil them for approximately 8-10 minutes before roasting. With these size cubes probably less time than that, more like 5 minutes perhaps? They don't really absorb any water that's not going to come out during cooking, and it gives them a crispier outside while also cooking more evenly throughout.

You and I cook in a similar style. I love my Thai chilies and jalapeños in just about any pan fried food. A Fresno chili is like dessert especially with umami flavors. I very seldom make just an egg or piece of meat, I cook a full meal with the trimmings. I enjoy your channel.

how does your stainless steel not stick when on low heat?
I cooked the steak in that pan, so after that it was seasoned - will be non stick for a while until cleaned
