Hare Kṛṣṇa, You may check other youtube channel recipes or iskcon cooking sites , these things are allowed. Just different level of following ekadashi, not a taboo to eat them.
Hare Kṛṣṇa, in iskcon temples it's used on ekadashi. Local temples use it, any iskcon recipe website and iskcon desire tree youtube channels you can re check it. It's not a taboo just different levels and standards of following it.
Himalayan rock salt. I don't use any other salt , it's used for my regular cooking as well. Sometimes I may use course sea salt but not for ekadashi. I only purchase regular himalayan rock salt

Different standards not an issue, it's not a taboo to use curry leaves or tomatoes because former one is just a herb and other one a fruit. For ekadashi basic standard is not consume grains, legumes, beans, cereal or pulses both the time of the day. You can choose more austere method to perform your fasting not an issue

The spices u mentioned are allowed if you powder them from whole, outside spices contains traces of wheat in them or corn starch . And cabbage is fine
