Karen it is really good, definitely different than store bought. I will definitely be doing it again in the future. I used some for lardons for our brussel sprouts with bacon, shallots and balsamic for Easter yesterday and everyone loved it.

Thanks, yeah the patience was definitely killing me. I could have pulled them out of the cure about a week earlier but we had a weekend off rain so I couldn't smoke them. The finished bacon came out great.
That's going to be some good bacon! Maybe find a Hickory tree that needs trimming. Green hickory is fantastic to smoke with. just an idea. Will be watching 👍😎
Thanks. I only have a pellet smoker now. I had a pit barrel but it rusted out and I never replaced it. It came out great. Used the ends of one piece in the brussel sprouts for dinner tonight.
