You can also saute the inner strings and seeds with green chillies and ginger in little oil. Grind these with some coconut and add to curds to make a tasty raita!
I have made this recipe at least 6 times in the last year. I adore this recipe!! This last time, I added a bit too much chili powder for family to tolerate so I added some butter. It helped bring the heat down a bit and made it juicier to put over the rice. May have kicked the healthiness down a bit though, but I may make this adaptation a normal step now.
I tied this.. I literally couldn’t eat myself let alone give it to my family. I made a mistake of adding a LOT of salt in the initial step which made it non consumable. Else,I think, it would have been good 🥲

Why do you put salt and remove water? I mean the vegetable is not bitter then why?Won’t it remove the nutrients?
By doing that smell also reduces so i will do.. If you feel it's ok you can cook skipping that step

Don't scrab the outer skin of snake gourd and it's mean that loss of nutrients

It will have different smell removing water removes that and also curry will come dry
