I was also watching that very closely. Maybe a remote rear brake lever? Or just a little less engine braking by way of a little clutch lever.? Definitely interested to know.

No microphone! The sound comes directly from the @insta360 X3
Does the helmet camera not interfere with your view?
No because we use just the upper part of the visor
