Vegetables has ANTINUTRIENTS w/c is a natural insecticide plants develop as a defense mechanism called LECTINS , TOXIC to our guts . To neutralize it , soaking , precooking using alkaline H2O , using baking soda to make H2O alkaline , removing peel & seeds and inside pulp , boiling , greatly reduces LECTINS making nutrients available for your guts to absorb them . Kabayan , pls throw away the prep / soaking H2O as it contains the lectin . Thank you FOODNATICS for keeping abreast and incorporating science in healthy cooking 💝😀 By the way , do these pre treatment with meat as well as animals feed on plants ( plus antibiotics & steroids) . The Chinese had been doing these for milleniums tho unaware (probably ) why .

Kenneth Woolard no way. Either deep fried, or lightly fried and then cooked in a curry. It’s the bitter melon including the seeds.
You can eat seeds when they are still soft and young, really add flavor and delicious. Crunchy, hard and not so palatable when seeds begin to mature.
