When the little girl asked what it is like being a princess, Catherine began with, “Well, you have to work hard . . .” As though it is a career that the little girl could aspire to like any other. This indicates such an awareness of “the other” that many of the royal family accept and embrace. A good example for us all.

So Catherine has just as much of a right to be called Princess Catherine and that is what I will call her. However, if you want to type or say "Catherine, Princess of Wales" every time you refer to her, knock yourself out.
