  • Dr. Jodi Sterle, Professor of Animal Science at Iowa State, says when it comes to pork demand, bacon has always been the favorite cut. However, pork loins have recently become the "most bang for your buck" cut as consumers can find them relatively cheap at the grocery store. Sterle reveals there is huge value for consumers because it is a high quality, easily digestible protein. She expresses with the high demand for pork products, the swine industry is working to be sustainable by using every part of the hog in some way if possible.
