  • I finally tested mushroom vs mushroom, OIL vs NO-OIL (Oil Free) cooking methods. So if you're on the journey towards a more whole foods plant based no oil lifestyle or not, this will provide some useful tips. Using my famous pressing technique that is a game changer when it comes to turning mushroom into steaks. Using this technique we'll cook up a side-by-side comparison video. This video is all about the details. We get into the nitty gritty of teaching the techniques and methods more in depth and look into the differences required to cook with and without oil and the reasons why to consider it.     Hooray! So happy to see you demonstrate that it's not necessary to use unhealthy oil in vegan recipes. And, I was also pleased to hear your remark that NO oil is healthy, not even olive oil or coconut oil.

    Thank you so, so much for doing this. For health reasons, I don't eat oil, but I found your original video drool-inducing and felt envious of those who could dive in and enjoy it! So this is such a welcome addition to your repertoire. Please do more like this or just some more no-oil recipes. I know people are resistant and think oil is necessary for cooking, but a no-oil vegan diet can be very tasty and very satisfying and so much better for our hearts. :-) As, of course, you know from your pioneering work with Whole Foods. I will shut up now and just be grateful we have oyster mushrooms where I currently live in Uzbekistan. Thank you so much and do take care and be safe in crazy Arizona. I love all the signs posted on your fridge and in your kitchen. Can you tell we're in lockdown???

      I do not realy get how no fat is healthier . . . The choice and way of usage is way more important than the amount and our bodies need fat for hormonal health and things like that . . .
      Regulating sugar intakte and focussing in healthy fats is way healthier than avoiding all typs of oil from what I geathered.
      Fatty fried carbs are problematic, but the problem there are the carbs and trans fat are problematic which is about choseing the right oil while a quite high usage of olive oil as in the mediterran diet are proven to be good for you. . . .
      But maybe you just have information I do not have or a special condition where things are different for you, I know tomatos are generaly healthy but have to avoid them like the devil myself ^^. . .

      @@SingingSealRiana check out Dr Essylsten's work reversing heart disease with a no oil whole food plant based diet. Not slowing down but REVERSING. Dr Neal Bernard also reversed Type 2 Diabetes on a similar diet.

      @@taekin9781 ok, do you know from when those are, I know that way back there was a theory like that, but that it got debunked with time, well trans fats are harmful and so is to much Omega 6, but that is not a problem with all oils . . . Biochemestry and the sience of eating are just so complicated . . .
      Thanks for the point of reference, for me oil free is not an option, I need to take in calories some way, but I stay clear of the more harmful ones and instead use high quality olive oil in cold dishes, which is proven to be heart healthy and coconut oil which does not effect my omega 6 to 3 ratio and can be used in cooking without creating harmful trans fats . . .
      Complex carbs for caloric intake are hard to come by if you can not have potatos, corn or gluten, and only stomach small amounts rice, oats, millet or legumes . . . Fructose I have to monitor too . . . I need to get calories from fat

      @@SingingSealRiana as I said go and check it out. This is just 2 doctors I mentioned above who have helped thousands and thousands of people reverse their diseases on this type of diet. No oil doesn't mean no fat. I love my nuts, seeds and avocado. Don't overcomplicate food by looking at macronutrients every plant has protein, fat and carbs. By eating an abundance of plants you can get all the calories. Just search on TH-cam their names and you'll understand why. Hearing them talk about their work is way better than having me explain it to you. I'm just a messenger. Check out Plant Proof too.

      If I do not look everything up, there is no way I can avoid malnurishment, I had run the numbers again and again, I would have to eat non stop to get enough protein from things like cabbage and spinach, or zinc. Or enough carb without eating straight sugar... And as much as I love nuts and seeds, I really can not eat all to much of them before I get problems... I really need keep omega 6 low if I want to stay painless.
      It really is nothing for me, but that does not mean I dismiss it in general, people are different ^^

    Derek, you're a good lookin' dude! You look like you're already at a healthy weight with no health issues. Thanks for all the cooking options you offer that help your audience make the change from less animal consumption to more plant consumption. Any change toward more plants is better for us, better for the animals and our planet. That being said, I REALLY appreciate your acknowledgement that there are truly no "healthy" added fats/oils despite your frequent use of oils in your cooking demos. Knowing that, many of us cannot afford to consume high-fat foods and recipes, if we want to continue to lose the fat we've been carrying for years. Perhaps when we reach a more ideal weight, we can "splurge" once in a while, but for now, I cannot express how deeply I appreciated this offering from Wicked Healty, and I hope to see more no-oil demos. YOU ROCK!!!

    I love it! I cultivated my own mushrooms just so I could do this recipe with clustered mushrooms.
    To learn how to do it without oil is great, will definitely adopt this option. Plus the breakdown was super instructive.

    Loved this video. I learned how to cook with no oil from you guys on the Plant-strong podcast. And I always press my mushrooms with no oil and they turn out great, nice and brown too. But I noticed in a lot of your videos that you guys are using oil. So I wondered why. Glad to see I am not missing the oil or the added calories. Will continue with no oil. Please post more videos without oil. I love that you guys have flavourful international dishes. I'll be trying your Vietnamese Banh Mi sandwiches tonight.

    I'm not against using salt but I never use oil or refined sugar in my plant-based cooking (or baking). It isn't just the calories in the oil that are bad, check out what happens to oil when heated and what it does to one's health. On another note about oil, for me, the idea of drinking oil (in plant based milks) really turns my stomach and that's why I always make my own cashew milk. I so appreciate you showing the non-oil cooking because it gives me more ideas on what I can cook and serve.

    Howdy neighbor ( I'm in Scottsdale)! I love that you did this without oil this time. I'm definitely going to try to make this now that I know how to do it in a more healthy manner.     I must say I just tried the original version of these mushrooms with the oil and oh my gosh !!!! This is a game changer!! Baby back ribs without murder !! Absolutely incredible. I already found a local mushroom harvester in my area less then 24 hours later , LOL. Thank you :)

    We’ve made these bbq mushrooms many times with oil, they are so very good. I appreciate the comparison, will do the no oil method next to try the taste and texture.     I recommend that you try crispy mushrooms with a homemade romanescu sauce. At least that's what we call it in Spain, it's wicked 🌶🔥🌱

    I guess what I usually do as a vegan is find whatever veggies I have in the fridge and whip out something to eat. It’s a good thing, but it gets hella boring.
    So this recipe looks amazing and makes the vegan experience much more exciting and creative

    This video is fantastic! Thank you! I have to avoid consuming oil for hormonal reasons! Dr. Neal Barnard discusses how oil can make acne, PMS, and monthly issues much worse and it's true! I wish it was just the calorie content issue haha!

      @@dezuha6452 i do my best to avoid adding oil when cooking. I try to sautee vegetables with a splash of water instead of oil. All my soups are pretty much oil-free. Unfortunately, baking vegan stuff usually requires oil and I've been baking a lot this fall and winter. Oh well! The Yogi Stress Relief tea with Kava root dramatically reduces menstrual pain, but I still get breakouts, probably from eating vegan baked goods 😭
      The Forks Over Knives website has an awesome oil-free balsamic salad dressing recipe, which I've been making all year!

    I’m really impressed on your changed thoughts and efforts to use no oil sometimes. Yes oil is the highest calorie dense food. If I use oil I now use a healthier avocado oil which works really well for cooking because of it’s neutral flavor and high heat tolerance. Thank you for addressing this issue !!

      I agree. I use almost no oil, but when I do I use the spray type avocado. So I'm using next to no oil, but still get the non-stick quality when I don't want to use broth or water (potatoes, mushrooms).

But for me, sometimes I'm willing to make the trade off, which is why I use a barely measurable amount of spray avocado oil when I want some crisp and sear, which is just not always achievable with water or broth.     Derek, thanks for the comparison. I have been addicted to oyster mushrooms because of you. I eat mushrooms every day. However a couple times a week I have to make a pressed oyster mushroom with sauce of the day. I guess this is a good addiction. It is the mouth feel that is so satisfying, not to mention the amazing flavor. Thank you! My great Aunt lives in Tucson not far from the Ethiopian restaurant on Broadway. She is up off Countryclub. And of course my beloved Naom Chomsky lives in Tucson now. I have been listening to the stats on COVID-19. I wish you safety and health. Give my love to the beautiful night blooming cereus that grace gardens at this time of year, the feisty male hummingbirds and the cool of the desert night in August.

    Great comparison. If we could stop using oil as a damn food group and start using it sparingly as a functional ingredient (like seasoning a pan or barely coating it to assist a sear) we could practically eliminate a lot of the health issues associated with the use of extracted oils. That being said any time we really don't need to use oil at all I am there. And frankly that is a good deal of the time!

    Thank you for this video Mr. Man, its good to see you cooking!!! Great comparison between the two and awesome results. It sure gives confidence not to use oil as a choice! When appropriate (or more often than not), I like to use organic virgin unrefined coconut oil, it isn't liquid until it melts. Its a nice "fatty" flavor. Mix it with a LITTLE Bragg's Amino Acids with it to get a butter flavor, its amazing!!!

      Thanks for watching! Coconut oil is still not a healthier choice, we will never say it is.. Especially if it solidifies when it's room temp. we think of oils as more of a tool than an ingredient. Seems to work for us. Cheers!

    Awesome. It's not just the calories though, in why not to use oil. It's bc it's bad for the heart. Dr. Greger and some if the other WFPB MDs have info about it. I was vegan 20 years before I learned about it, lol. I used to use oil on everything, but not any more.

    I choose to stick to a wfpb diet because I know it's healthier. So, no oil for me. Even though, trying to gain weight, oil and other processed foods would kind of help me, maybe... =)) Thank you for this great video. ;-)

    Thank you Derek for doing the comparison. I cannot find the mushroom steaks where I live (southern Spain). I tend to use oyster mushrooms and pile them on top of each other to try and make the steak. So far it’s been a rare treat because of the oil, I will definitely try the no oil one. How did I know you were going to get them mixed up once they were plated?

    in theory, a better method would be to pressure cook your mushrooms for a minute or two, to soften the walls which will help release the water faster when pressed
    Then use a small amount of oil to help release the water faster, when pressed, then just hot air(no oil) as it can get hot while touching more of the inner surface of the mushroom walls, which means more flavor!

    I LOVE these more technical recipes! Honestly, what a fantastic comparison!
    I've recently bought my first ever (would you believe?!) bottle of BBQ sauce and was planning to use it on tofu, to grill it later on on the barbeque...but I might change my plans :D Also, aren't they to delicate for BBQ? I don't know if I want to risk- they seem incredibly flavourful and tasty anyways!

      These are sold in Tesco in the U.K. Try googling growers near you or that ship, farmers markets or Asian markets. It's how we found these when locked down in Arizona.

    Question and a special request.
    Can I bulk cook these mushroom steaks and freeze them? Plus I would love to see a cast-iron care video since you are the master. I have cast-iron but I'm unsure if I've seasoned them correctly and unsure how to properly clean them. Would love your take on the matter. I've tried several of your recipes and all have been delicious. Thanks for what you do.

My younger sister didn’t believe she was at risk and one month ago had quadruple bypass. I feel I found out about this lifestyle JUST IN TIME! I love lions mane steaks! Love your videos.     I just scored some wicked wild channtrells and portabello looking things I was assured are safe lol and restored my cast iron and hav some of my Korean bbq sauce left so I can't wait for this thanks.would live to try the no oil but I hav some budder that's on the way out and can't wast that pricy shit lol.

    I wonder if also heating the pan you use to press the mushrooms would help at all. Cook them from both sides at once. Probably save some time.

      I wonder if heating the other pan might be a little dangerous because you have to press a very hot surface? You might need the “Ove Glove” or some other thermal protection.

      Been doing this for a long time and I don't bother with the top pan, it's not needed especially for unseasoned cooks but do let me know how you get on if you try it.

    I appreciate the comparison you made but I feel the caloric amount is so minimal that giving up all the benefits of cooking with oil (flavor) is not worth it to me.
    But then again, I’m in Texas where we deep fry pretty much everything 😁

    Have you tried air-frying the no oil version? That should get you more crispiness.

    Yum! I wonder if after pan frying the non oil one if you air fry for a min or two to get the edges crisp? Just a thought.

    Would you not want to put them back in the pan after submerging in the BBQ sauce, just for a few seconds, to caramelize bits of the sauce?
