Mort isn’t his real name. It’s just a nickname. His given name’s, Mortecai. Which is a play on the word Mort, and Mordecai. Also, while he is an interdimensional being, him being immortal is debatable as it was established that each Mort absorbs each other into them, thus giving them the ability to live longer.
In the Penguins of Madagascar show (which takes place in a different continuity than the movies) it's even mentioned that Mort's name sounds like "Morte"
