Not saying you're wrong, but actually they represent the Shishin. Kiryu: Seiryuu, Azure Dragon, Wood Akiyama: Suzaku, Vermilion Bird, Fire Saejima: Byakko, White Tiger, Metal Tanimura: Genbu, Black Tortoise, Water and Earth It doesn't make sense for them to use western cosmogony when everything else is rooted in eastern mythology. If I'm not mistaken even the games themselves use this nomenclature.

I feel like the small weapon and open-handed techs don't really fit Saejima because he's supposed to be an unrefined brawler-grappler guy. It kinda gives away which moves were just copied over from Kiryu's moveset. Also the crunchy noise that Clotheslining makes (2:43) fills me with some kind of perverse glee.
I do like how Saejima swings his sword like he doesn't know what the hell he's doing and does basically no damage with it. But yeah a lot of the generic ones that they all use can feel really out of place. I always felt that way about Akiyama too.

4:19 has to be my favorite. Although it's a simple move that everyone can do, Saejima, being built like an express train, puts his whole body weight into one single blow makes me feel bad for the dude on the receiving end. And the whip like sound that follows it is just the cherry on top
