Rex Incognito, Zhongli's theme, still hits so hard, ngl. It's a bit of a tradition for the fandom to come back to that particular demo each time we have a new demo and ngl, I partake in that tradition in huge part because of that theme
Zhongli's demo is a bit of a rite of passage of sorts for new fans, as that one is really where things get much higher in production quality as you saw. Even then, they're still getting better and better as time goes on. If I really had to pick an all time favourite, it would be Neuvillette's demo (he's in Fontaine you have a ways to go for that one yet). I will admit to bias though, cause I love Neuvillette as a character. In terms of all time favourite character instead of demo, for me it's Xiao, and not because of the fact a lot of people see him as an edgelord. He's pretty complex and interesting when you dig a little below the surface, but that's a discussion for another time.
Yanfei probably marks the point at which 4-star characters started to regularly get their own demo trailers. While her own trailer seems a bit rushed, there's a reason for it that isn't immediately apparent to somebody just watching the playlist. We didn't see or hear of her during the main questline (in retrospect it's pretty clear somebody deliberately made sure we wouldn't cross paths; taking the long way through that story turned out to be the wise if not the smart choice), but most players will be effectively doing her character story quest soon afterwards and thus will be getting to know her pretty well without the need for a trailer. But there are two catches to this: first, her story quest has absolutely no on-screen combat (if you read between the lines and already know her aptitudes you can realize from one line said in passing that shortly before meeting you she went through an exhausting day of dungeon-crawling - as it happens on your behalf - and while too polite to point this out would rather do things the easy way for a change) so getting to know her in-game will tell players nothing of her combat style or gameplay. And second, it's perfectly normal to meet eventually playable characters a year before they become so and without the demo trailer players might not have realized she was in fact available as soon as they met her.
A note about Zongli's demo (the first in this reaction): what you refer to as "the guitar coming in" with distortion later, is actually an erhu with distortion :)
Hope you do the Character Teasers once you're done with their demos! The teasers give you a little bit more insight on the characters. Hu Tao unfortunately did not release on, or near, Halloween. She released in early March.
qiqi birthday is 3.3, which is the shangsi festival in the lunar calendar while hutao birthday is 7.15 which is the zhongyuan festival in the lunar calendar both two festivals means ghosts festival such as Halloween
Hoyoverse explicitly does not celebrate Halloween or any real world holiday other than Chinese New Year... although it turns out Fontaine does have an analogous holiday we've never seen happening in which children dress up and go from house to house with the line "Trial or Treat!" looking for candy. (We do not know if Alice was involved in importing this holiday, but she's the usual suspect in this sort of thing and Furina certainly wouldn't stop her.)

There's clearly a production budget difference between these categories, but either way, they each have their own expectations and charms.
Fun Fact: in terms of release date - Hu Tao is technically a New Year character! They were going to release her in the New Year patch, but because of her whole 'omen of death and fate' stuff they postponed her banner, and gave Keqing - a standard character - her own banner, ao that Hu Tao wouldnt run during New Year.
Doing all character demos and maybe all versions trailers, like 1.0, 1.1, 1.2 until 5.0/5.1. Thats a lot of videos and its something ppl always like to watch.
4 star character demos are more matter of fact. 5 star characters get the full treatment. Also .. there's a kind of slider for the demos with the ends: [Functional Demo -- Character Personality]. As the game matures the slider gradually goes from one end to the other.
