    Ingredients:(15cm round)
    Cookies Base:
    90g Lotus biscoff 로투스쿠키 蓮花餅乾 ロータスクッキー
    40g Unsalted butter 무염 버터 無鹽奶油 無鹽牛油 無塩バター
    Cheese filling:
    10g Gelatine leaf 젤라틴잎 吉利丁片 魚膠片 ゼラチン葉
    250g Cream cheese 크림치즈 奶油起司 忌廉芝士 クリームチーズ
    40g Sugar 설탕 砂糖 グラニュー糖
    1/4tsp vanilla bean paste 바닐라빈 페이스트 香草莢醬 バニラエキス(シード入)
    1tsp Lemon juice 레몬즙 檸檬汁 レモン汁
    150g Whipping cream 생크림 鮮奶油 淡忌廉 ホイップクリーム
    50g Lotus biscoff 부순 로투스 쿠키 蓮花餅乾 ロータスクッキー
    Caramel sauce:
    100g Sugar 설탕 砂糖 グラニュー糖
    2Tbsp Water 물 水 水
    100g Warm whipping cream 따뜻한 휘핑 크림 暖鮮奶油 暖淡忌廉 温かいホイップクリーム
    a pinch of Salt 소금 조금 鹽少許 ひとつまみの塩

      freeze it and eat~ my husband love this way so much~

    What kind of flavor do the Lotus biscoff biscuits or cookies have? Can there be a substitute? Could you show the back of the package as well, maybe? Thanks

      I guess it might be hard. Lotus biscoff has a very unique flavor. Just like we can hardly find a substitute for Oreo if we want cookie n cream flavor.

      agree, the flavour of lotus biscoff is so special with a bit caramel flavour
      you can replace with oreo or digestive biscuit can also make a cheesecake, just don't have the lotus biscoff flavor
      you can also mix it some caramel sauce into the cheesecake batter

    I dont have gelatin leaf can i use gelatin powder ? And how much ?

      one gelatin leaf (3g) equates to 1 teaspoon of gelatin powder (4.2g), so maybe use around 12g of gelatin powder

      if you want a softer cake use about 6-8g, for firmer textrue use about 10g
      soak in 30g water for 5mins before you melt it

      cut into small piece seems slightly easier to soften
