I'm confused. On the recipe it says to cook 45 min, then flip and cook another 45 minutes. But on this video you cooked for 35 min, then cooked 5 min and flipped and then another 5 min. So is it 1hr 30min total cook time or 50min?
I made these wings exactly how they did them in the video and they turned out perfect. I love my PBC but have noticed discrepancies between written recipes and some of the videos.
I was curious to know how high the rack is above the coals in the PBC. Is there just a single height setting or is it adjustable? I was told that it is possible to grill steaks in the PBC, but I think the rack would have to be quite close to the coals, lower than where it appears to be in this video.
Removing the rods allows for more air flow and higher temperatures. Removing the rods for cooks like wings is okay. For the longer, slower cooks, leave the rods in for more consistent temperatures between 275F and 310F for 6-7 hours.
I'm pretty impressed with the product... Looks like a great addition to the deer cabin. But one question - why do you recommend putting the bars in when you are grilling?
They don't necessarily "recommend" it. The bars simply fill in in the 4 holes in the top of the barrel. Leaving them out provides more airflow at the top and would thus raise the temperature. It's probably more of an issue when you're slow smoking something while using the grate.
How much charcoal did you guys use? I'm sure it wouldn't be the same amount you'd use if you were smoking ribs or anything with some weight to it. Asking for a friend :)

Some people like to offset the lid at the end of the cook to get those barrel temperatures up and the skin nice and crispy. Yum!

Unfortunately yes, to ensure a good cook, you need to full the coal basket everytime
Did you dry rub both sides of the wings? That wasn't explained....
