Smashing Delicious Chicken Cordon Bleu!

- Ingredients:
4 boneless, skinless chicken breasts
8 slices of prosciutto
4 slices of baby Swiss cheese
4 slices of white cheddar cheese
2 cup of all-purpose flour
4 eggs, beaten
3 cups of Italian panko breadcrumbs or regular
Sauce ingredients:
2Tbsp of butter
2 cloves of minced garlic
2 cups of heavy whipping cream
1 cup of Parmesan cheese
2 slices of white cheddar
1/4 cup of Dijon mustard
Seasonings:
Garlic Salt, onion powder, slap ya mama seasoning, adobo seasoning to taste
Directions: On a cutting board, place a chicken breast between two sheets of plastic wrap and pound until about ½ inch (1 cm) thick with a meat mallet, rolling pin, or heavy pan. Once the chicken is flattened, season the meat with the above seasonings. To stuff the chicken you’re going to lay two pieces of prosciutto on each chicken breast along with 1 slice of baby Swiss cheese and a slice of the white cheddar cheese. Next roll them up tightly and secure with tooth picks. To bread the chicken your going to dredge each rolled chicken breast in the flour first, then the egg mixture, then the panko bread crumbs and fry them in a cast iron skillet with oil on medium high heat until golden brown and temp to 165. Once sauce is done drizzle on top of chicken and enjoy!
For the sauce: In a sauce pan on medium high heat add 2 Tbsp of butter and let it melt then add minced garlic and sauté for 2 minutes. Next add your heavy whipping cream, Parmesan cheese, white cheddar cheese and Dijon mustard. Once combined season with adobo seasoning and taste as you go.
