I made mini versions of these to give as Christmas presents last year, they were a big hit. :) I found the first time I made them the chocolate melted too quickly when out of the fridge, so for the mini ones I didn't bother with the coconut oil and they lasted a lot longer without melting (I also made a mixture of white, milk, and dark chocolate ones).
Take a drink from one of Jim's cocktail recipes every time he says "satisfying" hahaha. Jokes, Jim! I love when small things fall perfectly into place as well

When I saw this I was like "omg need!" But I don't have almonds or maple syrup or coconut oil so as you made the official recipe I made my own by just melting the half bag of dark chocolate chips I had on hand with probably a tablespoon of butter in my microwave, pouring half into as many cupcake tins as it would fill comfortably, spooned a little of my favorite peanut butter in, and finished the top with the rest of my chocolate. They're in the freezer right now it was so quick and no mess. Tanya's recipe does sound amazing though I'll need to go pick up the other ingredients soon!
The coconut oil hardens when it is cool, making a firm, solid chocolate. Butter will not do that! If you know what chocolate shell is (the stuff you dip/pour on ice cream and it hardens) it is made the same way!
Love watching Jim Bakes, you make all my mistakes for me so I don't have to (the spoon)! Also you do everything with such a positive energy I find it difficult not to watch! Can you a basic Victoria Sponge please? That's where I'm at haha! X
If you just saw jim out and about, you would think of him as a man who's serious but if you knew him and talked to him you would then think of him as a very very cute manchild ... who loves his wife very much 😄
