@TrueZeal : The mustard seeds are small and once they pop, they soften up further. As for the Daal - it is crunchy right off the stove but over time it does soften up as well. Both the ingredients add a great dimension to the flavor and texture of the dish :)

Hi, thanks for the recipes. Here is a variation which is healthy and yummy. Soak some mung daal (1/4 cup) before you start the preparation. When you add the shredded cabbage to the pan, also add the soaked mung daal on the top and cook by covering the fry-pan. Open and stir after 5 min. continue till it is cooked and then add the salt and stir. You can also add a table spoon of peanut butter in the end and stir it in for extra taste.
@Darrylk123 A trip to your local Indian grocery store should solve your problem. Also, many of the spices can be found in your local grocery store spice aisle or stores like Central Market or Whole Foods. Finally, the online option is alway there.

Shredded Coconut is available at Indian Stores and even regular grocery stores (in the frozen aisle, with desserts).

@theinquisitor If the oil is too hot, it may brown the daal really fast and not give it enough time to cook through. Usually, cabbage produces enough of its own juices that you would not have to add additional water.

Another variation would be to add at the end roughly ground shredded (or dessicated) coconut along with some jeera & chopped green chillies. For a zing u can add few shallots while grinding. It really tastes awesm with rice. Btw the whole prep+ ground together is called Cabbage Thoran in Kerala.
mustard seeds is rai dana, not methi dana (fenugreek seeds in english). as long as you dont add too much oil, this recipe is good for wellness. desi food/south asian food in general is good if you cut back on the oils and frying as well as salt and sugar.

Worst case, you can omit the daals. You'll lose some of the classic flavor. These daals are basically split legumes, but not really like lentils. Just wondering...are there no Indian grocery stores in Holland?
Yeah I am also amazed why many chefs are using them like that. They are totally unedible in that state. You may even break your teeth on them. An alternative that works well, is to dry roast them first, let them cool to room temperature and then grind them to a powder in a coffee grinder. Add this powder to the spice fry along with the other ground spices. This is how sambhar powder is made, so it is not a totally odd thing to do and it is much better than using whole dhals I think.

my mom makes this in a similar way.. just love the way it tastes..

No, it will soften up with the moisture from the cabbage.

In an Indian grocery store, you will also find already shredded coconuts. Just check the nutritional info before using it though.

Why do you need to use and green chillies ?
Green chilies have a wonderful fresh spicy taste. If you are opposed to the spice level, you can definitely leave it out or use just one.
If u put some ground nut and lemon juice it will be more testy.
Do you cook with refined oils? It is very damaging to your health. You need to tell everybody.
You can leave the urad daal out.
