    Bro I can see that perfect score... because when a sicilian slice breaks down, having been cooked in a seasoned pan, it delivers that crazy dissolving gluten taste combined with the oiil, cheese and seasoning.. it's crazy! Great review.

      Correct, the long seasoned pan is everything. Our pans were 40-50 years old, never washed

    I tried some of the best pizza joints in NYC when I went there. Patsy's, Joe's, Lucali, Prince Street, John's of Bleecker Street. They were all great. But Di Fara was a cut above the rest. I will never set foot in New York again without going back to Di Fara. Their pizza alone is worth a trip to NYC.

    He gave you his insight, some tips on how he makes it and a lovely story about his Pops and how he built the business. What more could you ask for? And, to top it off, he has BANGING food !That thick slice looks rich in flavour and texture. I visited Brooklyn in 2012 and found a place called Spumoni Gardens near Coney Island. If it's still there and you end up back on these streets you def need to go there. Thanks for being real!

    Funny thing is, all of those ingredients, even the flour, is imported from Italy but there is no pizza in Italy that tastes like that. It's actually tastier than anything you can get in Italy. I think it has to do with the oven and the prep of the dough.

      Pizza came from Naples then migrated to America then back the the rest of Italy and the world so in a way you can say what we know as pizza is actually American.

      It's most definitely not how they prep the dough as it's nothing special and the flour isn't anything special. The fresh ingredients on top and the mystique is what makes it.

    I have the DiFara in Cary, NC near me. It was opened by Dom DiMarco Jr.’s cousin.
    I agree with the review. The square is better and it brings people to the house. Day before Thanksgiving we buy 4-7 pies and have a full house when we do.

    DiFara is the best pizza I have ever tasted. We drove from New Jersey and they charged $30 per pie but it was worth it.

    real deal. not everyone loves the sicillian style, usually too doughy but when made right it can be a cargo ship of flavor (it can hold up so much stuff essentially). Try Donna's in NJ... great sicillian as well... Palisades Park NJ (not as good but one of the better you can get around here)

    I am so happy that I have seen your review, because on Google maps Di Fara has a 4.2 out of 5 score, which is pretty low compared to other places in Brooklyn, it appears that it depends on who makes the pizza there, of course you had the best person there make the pizza. Apparently some pizzas made there were seriously messed up, and sold anyways. Now Di Fara is on the top of my list of places to try. Since I only vacation in NYC I can only try pizza there so many times.

    Hi Matt I have been watching ur content for a long while now and had to pop in and say I love what u do so honest and u love what u do I love the fact callum chats along. I love asian Thai food which is something I don't see u reviewing but if u did ur score would go from 9.4 to a prefect ten. U all make such a difference to these places and in a lot of cases grow them well done to all the team

    I've only been once. I think I got a dud slice. It was good, but my favorite is still Best Pizza (especially the grandma slice). I will go back to Di Fara the next time I'm in NYC though. I know they can do better.

    Dom put grana padana cheese in the regular pizza before it went in the oven and then when it came out more grana padana ( which i hate lol ) and lots of olive oil after cooking - also horrible for me but i respect the man of course

    How did it take you hours to get there if you were already in Brooklyn? Were you crawling? I got there in less than an hour on the subway from Times Square in the middle of the busiest season in June.

    It's odd that he admits each pizza could be different at his restaurant depending on who is making it. It seems that since the kids took over and started expand, that the quality hasn't been as consistent as when Dom was there (which I never had unfortunately).
    In my experience, I felt like this pizza was way over-rated when I had it a week ago. The sauce and cheese we're as good as it get's but the crust was way too thick when I had it... this could be different depending on whose making it which is a shame. It was an 8.2 pie to me and I tried both the regular and the square slice. I really wanted it to be as good as it was advertised but it just wasn't.

    I tried di Fara back in 2013 when Dom was still alive and was making pies himself. My expectations were way too high, and therefore the overall experience was a bit of a letdown. However, it nevertheless a solid pie.

    Just a few blocks from where i was born and raised. This was a great local pizza spot in the mid 90s. By the early 2000's they started raising the prices a ton. Good slice but too rich for my blood. =( The Yeshivah of Flatbush opened in the 1920s just a few blocks down way before the pizza shop. Was always a lot of jews in the area. Great location right by the train! Not far at all only 25 min from downtown Brooklyn.

    Thing about incredible pizza, it doesn't always have to be expensive. it can be very very basic, BUT!!! it must always have the key features. great cheese, the better the bread the better overall. great flavor sauce, again doesn't have to be expensive but it must be balance and taste right. thin is good, crisp also good but not cracker thin. thats bar pizza. And If its good and basic it must be reasonably priced. The SLICE is on the go food, what you get jumping off the bus or stepping out the subways. Looking for a quick great meal. of course you have the higher tier levels of pizza. overall you can sight around 4 tiers of pizza. all great from from cheap to expensive. much has changed throughout the decades, especially in Brooklyn both good and bad. a changing of the guards, as the legendary traditional family run spots have gone away, families matriarchs pass away, and the children no longer want to keep the business going, or choose to do it in another state. aka Florida. typical move. so alot of the really REALLY great foods get lost to time. but you do have those individuals starting new spots, new foods, and its great, just not what things were of the past.

    Your reaction to the Sicilian slice is normal to most New Yorkers. Dave never liked the Sicilian then he turns around and loves Detroit style, then he turns around and realizes only 1 place in his beloved New Haven is top 10 so he doubles down and re-rates several places. This includes giving Monte's in his home of Massachusetts and perfect 10 with complete "home town cooking" involved. Dave still doesn't know what a Pizzaiolo is never mind being able to pronounce it. But Dave is a great American and a friend to small business.

    New subscriber here. Difara has some issues, yes the pizza is great.Problem is (you noticed) place is dirty as heck. Last time I was there (11yrs ago) huge pregnant roach goes up the wall..i said to Dom," hey theres a roach", he says dont worry they dont eat much.
    Plus, thats not including the shit flies around the bottle/can, 5c returns or the rusty Scissors to cut basil, he used to use.
    Not a hater.. Too many better places in new york city and brooklyn to go without getting sick. I always fought to Tottonos in coney island was the legend anyhow..and L&B squares

      Been taking the subway here since i was a kid. They often failed their health inspections. Would say grade pending or a horrible score hung on the window. Mid 2000's they closed several times for rat infestations. By 2006 they were charging $5 a slice while every other joint in Brooklyn was still under $2. Use to be a great place in 1999ish when it was still cheap.
