  • I've been working a lot with Lions Mane mushroom lately and I've been doing a lot of mushroom tests. I've been able to use everything that I've learned from testing on king oyster mushrooms for this lions mane steak recipe and WOW is it good. This is by far the best vegan steak I've had and I think I'm almost ready to reach out to Guga to have him try it.. Not yet though... almost.

    I have NEVER seen another channel that shows you how to make plant based meat with as much knowledge and precision as this one. When I see another recipe I always find things they leave out that you would have added that would have made it better. These always look amazing. And I love that you are not afraid of science.

      I commented that mushrooms do not have the same texture as steak, but in all honesty I have only taken lions mane in supplement form. Sounds great

    If you were to sell a whole kit to make just this mushroom steak I would totally buy it! I think, if you could sell it on Amazon, you would make a fortune! Little sachets of the ingredients and a dried lions mane in one box? You'd make a killing!

      Even better: Read up on cultivating mushrooms and give it a go. There is a 90% chance you'll get hooked and have a new hobby for years to come.
      You can cultivate medicinal, active and gourmet mushrooms and it's quite a hassle to get it down but as soon as you get the hang of it, it becomes super easy to get decked out with more mushrooms than you'll ever know what to do with.

    I don't get why people leave comments like "just eat a real steak", if they don't like the video, just go watch something else. Also, I'm interested in your videos even though I eat meat because you are showing good examples of how to use and control certain flavours. Not to mention, a lot of people can't eat meat even if they wanted to, so these videos are beneficial to them also. A couple of my friends are so allergic to land meats that if they eat it they're sick for days, and a number of my friends also are allergic to shelf fish and sea animals. Others live in areas where meat is way more expensive than non meat foods. Believe me, I love meat and I will continue to eat it for multiple reasons, but these videos are genuinely helpful to people who can't eat meat no matter how much they love it. They're helpful to me as a chef, cooking for people who can't eat meat even if they wish they could. Vegetarianism and veganism isn't a choice for everyone, unfortunately, and it's important not to discourage someone who is working hard to make life a little better for the people who wish they could have meat.
    Thank you for your hard work, dedication, and enthusiasm Mark. I appreciate it.

    made a steak with lions mane about a month ago, cooked it like a normal steak, by basting it in (vegan) butter with thyme, garlic and sage, and it was MIND BLOWING, have to say you definitely do not need the marinade you used, tastes like steak without it! so damn good! p.s, the English language changes constantly, dictionaries updated constantly, who cares

    I bought the dried Lion's Mane through Amazon.. it was labeled under it's scientific name of Hericium Erinaceus.
    I hope this helps. 😋 👩🏻‍🍳+🍄=(🥩 🚫).
    I have been fretting, trying to figure out ways of using the dried Lion's Mane. ,..
    And now I know. 🤭😋..

    Damn, this looks interesting! Will definitely try to get some Lionsmane mushrooms. Unfortunately not that easy, like 95% of the people that sell these seem to market them as magic vital healing mushrooms and want like 100€/kg which is a bit much 😅 Especially these big ones seem to be rare, all that I see online are like 1cm in diameter which is a bit pitiful for a steak :D

      @@kalinaszek That's going to be my way of solving this issue, I've decided. Even if I wasn't vegan, the idea of having all these mushrooms growing for myself, given how much I love them, would be worth it.

      Seconding the grow-it-yourself thing. The mushroom kits they have these days make it super easy to grow your own fungi. I'm about to get my third flush of lion's mane off a Far West mini-farm. You can park them in the fridge for a few weeks in between fruitings until you need mushrooms again.

    the lions mane has a fuzzy outer texture, could you fill the space between the "hairs" with gluten powder, and let it autolyze into a more meaty outer skin?

    The end result on these - amazing! I think that visually the "pork belly" was more effective because of the color BUT texture-wise and considering the flavours you added here I would probably love it much more :D A perfect centerpiece to a classic steak dinner!

    I think making plants taste like steak is more interesting than making steak taste like steak. I mean if it's a steak it tastes like steak then no big deal but if a mushroom tastes like a steak then well that's something!

    I have no idea why people get so triggered over labels like "steak" "milk" "eggs". These are just words....btw You´re eating SOMEONE else and every part of them - the labels here are "blood cells", "bacteria", "organs", "skin",.....so shuut up and check your cholesterol! :D
    I don´t mean to be rude, but come on people, you can have plant-based meals, not hurt anyone and still enjoy your food, it´s a win-win. :)

    The most impressive thing about this video is that FORK you are using. I'm looking for that same style of fork which I find is the most perfect design for cutlery. which is its long straight thick handles and curved fork end.

    Great explanation why this really is a steak. In Germany it is forbitten to call this a steak, same with almond milk, vegan cheese and so on. People could mix it up and eat the wrong one and propably die from it. I will try this soon!

    I think part of the texture might coem from the fact its has been dried. Maybe you could chop up and mince more common mushrooms, dry them and then bind them into a steak shape... guess the problem is you may end up with something a bit "burgery"

    I'm new to your vids so maybe this is something you've already explored, but with your expertise I'd love to see recipes for flavours that meat couldn't do.
    I like that we can mimic meat but I haven't seen much of ppl explore where flavour can go leaving meat behind.
    There's a food revolution on the horizon and I'm always interested when I see ppl with your talent share your knowledge.

    Weird request but an idea I had and so far have been too afraid to test on my own is trying to curdle a mushroom milk into a tofu/paneer-like curd.
    I've done it with alt milks other than soy, and found it depends on how much protein is in the raw ingredient itself eg. pea milk curdles better than almond milk. Mushrooms have some protein so they should curdle in theory but I'd love to see someone else try first so I don't waste a bunch of mushroom 😅

      Mushrooms have a lower percentage of protein than nuts or legumes, and the insoluble fiber in mushrooms is chitin instead of cellulose. I think you're probably not going to be able to make a curd from *just* mushrooms. You'll need to add some fats and proteins, possibly even some carbs, from other sources to more closely mimic the ratios found in plant milks.

      Several companies make grow kits that just require a little water and a plastic tent. If you can get those where you live, start there, it's easy!

    Oh dang, this looks good! (and super easy) -- also you reading out the definition of steak was cracking me up. If I can ever find a good source on these I might have to make them up. Any idea if the bacon recipe from last week can be adapted to dried and yield a similar texture? I have a feeling that dried might be easier to source (for those of us a little too afraid to grow them ourselves).

    I would love to cook with lion’s mane mushrooms, whether as a meat substitute or just as a dish in its own right (mushrooms are so tasty!) but I can’t find them just as mushrooms for culinary use. I can only find them as health supplements - capsules and so on.

    Since Lion has similar fibers to muscle meats, have you tried cutting a large lion ‘on the bias’??

    Sauce Stache, would you consider dehydrating them before soaking them? Adam Ragusea made a video about how dehydrating the mushroom increases the flavour. If so, then please make a comparison batch without dehydrating them.

      I think the were already dried out.. these were not fresh mushrooms

    I found an online retailer for mushrooms. I was surprised by the price, but then I remembered that dried mushrooms are very light weight, so 16 ounces is probably a lot of mushrooms. How many servings do you think is in 16 ounces of dried mushrooms?

    I really really love your attitude towards vegetarian food that it must taste way better than animal based food recipes, because a lot vegan recipes out there are so bland with no wow! factor in it, we need to let meat eaters know that our food tastes better than theirs, and you don't have to worry about health issues when you're eating it 😆 I recently got some vegan strawberry yoghurt and it tasted bland because they'd minimized the sugar content, so I added more sugar to it and it tasted glorious!!! I also wanted to thicken it up like Greek yoghurt, but I'm not sure about which vegan thickening agent to use, it was made from cashew and coconut creams. I know diabetes or high blood sugar levels occurs only when people eat meat and sugar, being vegetarian myself I never get high blood sugar levels at my monthly health tests even though I eat a considerable amount sugar, but that's only because I don't eat meat. Consuming sugar and meat is a bad brew, I know I used to do it and my health test results were not good. But thanks for the video and information, happy eating 😄

    I ended up growing lion's mane myself, as the price in Norway is high... (22.68 usd for pound. Or 500 NOK for a kilogram for those who understand more sensible systems than what you have in the US ;) )
    And I am shocked. Not only does it work as a steak. But compared to animal flesh, it has some advantages. It seems like it takes up marinade better?

    I really like watching your videos, but I never tried one of your recipe because I don't have the uncommon ingredients and/or machines and utensils you are always using. I wish your recipes were a bit more user friendly or at least if you would say what else we can use as an alternative. I'll keep watching, just my thoughts :)

      He uses most of the same ingredients in every video. Cappa carageenan, methyl cellulose, black strap molasses, etc. If you buy tsome of those things you'll be able to use them in other recipes.
      With the gadgets you can usually find a workaround. For instance his perforator in this video could just be done with a toothpick

    Mushroom steak is way healthier than real steak. I stopped eating red meat for that reason. I never really enjoyed steak as a red meat eater. But this is tempting to try.

    I think if you were to look into and reach out to Perfect Day they might be willing to send you some of their raw product for you to experiment and develop recipes with and bring more attention to them, I would be over the moon if something like that could happen. It's that mix of science and veganism that makes me think of you and gets me so excited for their progress.

    You know, until your small restaurant, that becomes a chain of restaurants, where you have periodic web training and conferences to teach the chefs the meals :-)

    Have you tried using Shiitake Mushroom's stems? In my country, shiitake's stems often used as the main ingredient for meat substitutes as their texture is very similiar to meat fiber (if you shred it)

      use dried shiitake mushroom, soak until soft & separate from the stems. Or it would be better if theres store that selling dried shiitake's stems
