    My third video of the day of yours. Love this frugal series. When you teach people to can your really teaching them to print their own money!! Saves so much money. I can sale produce and grow a good size garden too.

    Delicious but definitely not heart or artery friendly. Gotta keep Howie around. I'm sure he doesn't make it easy. Love all your creative ways to stretch a buck.

      I always laugh when I see people turning out chicken fried steak, corn on the cob with mashed taters and gravy and biscuits on FB...and everyone oooooos and ahhhhhs...but NO ONE ever seems to notice that we rarely eat like that. That SCratch made, salads soups and stews, home made meatloaf and what not...but people still seem to think I am killing Howie with my cooking. I KNOW you care...but I am going to REPEAT what the doctor said. " Your husband is a GENETIC perfect storm for Heart Disease, you could have fed him lettuce for the last ten years and he would still have had the heart attack. The fact that he quit drinking and smoking and took up homesteading was the ONLY REASON he had NOT DIED of a massive heart attack 10 Years ago!!" ( Like my dad who dropped DEAD standing in the ER at the age of 49 The location of his massive heart attack was the ONLY reason they could save him) I know you are speaking from love. But I am getting harrassed by people who e-mail me...or comment and then take it down real fast so NO ONE sees it except my INBOX. So Forgive me if YOU got the lengthy answer. More people want me to cook...but it seems if I am dammed if I do and dammed if I don't. *wink*

    Hear me out, Buffalo chicken macaroni and cheese.
    I had some cottage cheese I got severely marked down, cream cheese portioned.. made a rue, added the cheeses, some tex mex spice, some Frank's Buffalo ranch seasoning powder, decided to add a lil marble cheese.. added a lil Buffalo sauce after I gave it a taste..put in a pint of canned chicken, mixed with the cooked noodles, topped with some more shredded marble and bread crumbs

      It was a bit of this and that and nothing measured, but holy cow was it good and tastey.
      Season with your eyes and heart.
      I got some portioned up for Jim and vacuum sealed and froze.

    I have been working really hard to use up things in my freezer because during the summer I stocked up really good. Prices are so high right now I'm mainly replacing the stuff I use with sale items. I miss having my wife here to share meals with but nothing I can do about that now. It's hard cooking for one person most of the time. So I tend to do simple meals more then when she was here. I have a grand daughter just about a mile from me so I fix dinner for them now and then. Sad part is they both have covid now and I can't see them. Making a care package for them that I'm going to leave at the door and they can just step out to get it.

      @@lanaebarb1984 It's not just her I miss the crazy family life we had. We had 3 kids of our own, plus had 4 foster kids and a daycare center. I worked at as the director of a boys and girls club and my wife ran the daycare. Our house was always full of life plus the kids friends stayed at our house because we had a pool and a huge game room in the basement. We had a 8 burner stove, 2 door fridge, 3 freezers, and huge pantry. I order food and had it delivered once a week. We still ended up at the store for small things but it was the easiest way to feed everyone. Do I think I could handle it anymore no I just miss it. I really don't know how we did it but by the grace of God we made it. Christmas is always a hard time for me because we use to start buying in December for the next year. I can remember being outside putting lights on the house at 1:00 a.m. and decorating the yard. Now I put up a tree and a few things around my apartment and that's it.

      Ken I'm sorry about your loss. You seem like a wonderful man, husband, dad, and grandpa. I know you feel lonley right now, even with all of your cherished memories. I hope you can do some video calls with your family to stay connected. Maybe talk to a stranger at the grocery, it's never too late to make a friend.

    Another great lesson Bev. I am enjoying this series. Who knew it would come back around that what I learned and used to stretch food dollars in my youth has now become a must know in my late 60’s . I feel for the youth of today what a challenge it must be for them to navigate this new food cost reality

    A great tutorial on how to use what you have on hand. And a recipe that I will be trying soon, looks great! My cheese grater wanders off from time to time and eventually shows up a couple of weeks later. I also trim off the outside slice of an "opened" onion.

    I will use my home canned 'evap' milk when I make this on Friday; used one cup today when I made homemade tomato soup with passata, onion, garlic, bay leaves, basil, oregano, sea salt and white pepper. Comfort food on a rainy day. Love to you and Howie and Briar. p.s. I do not think that pyrex dish could handle the broiler.

    Another excellent recipe. We will be making this for Thanksgiving. More recipes please. Will be cooking this with my daughter so someday she can make this for her family. You teach us.     Bev, I was just at my grocery store here in NW Indiana, and a package of store brand bacon was $7 ON SALE! Brand name bacon was almost $9! Was about $5 a few months ago. Paying $3.50/gallon of gas too.... :/

    We have Turkeys here for .33lb and potatoes for 1.97lb for 10lb. I would love to buy 50lb of potatoes and can....but I have NEVER canned and am terrified. I wish we lived closer....I would so love to be your student for a day or two. Blessings!!

    I have started using ground turkey. I didn't think I would like it but I actually like it. I'm so thankful for what I do have. I like making it stretch! Gets my creative juices flowing!

      It works just fine for tacos or sloppy joes. I add in a bit of sausage for chili and meatloaf for a more meaty taste.

    Thanks for the tip about mixing the flour milk together like that. My grandma taught me to do it differently. Going to give it a try. Always love new to me ways of trying things.

    I save and use my bacon grease too. Evrn freeze it in small containers when needed. That stuff is considered "liquid gold". Lol I'm going to try this recipe, but scale it down just a tad. Our bacon prices are through the roof in North Alabama

    You’re awesome Mrs. V! My grandmother used bacon grease a lot. We didn’t have a lot but she always stretched what we had. She raised 9 children and me. Not one of us had heart problems. It’s the point of using what you have at the moment. It’s not like a every day thing. Not trying to be rude but I’m sure my Nan would of loved a donation. Don’t give an opinion if you didn’t experience the struggle. I love all your videos Mrs. V. You have taught me so much! ❤️

    Good looking casserole!. Sadly, in Portland, OR., USA, prices are much higher. 1/2 pound bacon is $5.00; 1/2 brick cheddar is $4.00; frozen broccoli is $4.00; canned milk $3.50, etc. This meal would cost me $15. or so; even with sale prices. I would stretch it by using 1/3 lb. bacon and cheese, & less broccoli. I could add another cheap vegetable like leeks or a turnip. Even more vegetables like a carrot or shredded cabbage or spinach would work also. Thanks for the idea!

    If bacon is high, check out bits & pieces package. I look through them & sometimes find a real meaty pack. It is thin & doesn't fry up in pretty slices. The taste is great though. My Kroger has 3 pound pack for $9.99/ thats $3.33 pound. When my daughter was little I always bought a box of bits & pieces. I would go through it & sort pieces out per use. I froze it. Freezing bacon, then cooking it seems to render fat off easier. I always got good meat. With just two of us a five pound box could last up to three months or more. God bless.

    Boy, I agree Bev...when did we think recipes using bacon would have to be carefully considered? I've reviewed some of my saved recipes that call for a whole pound and there's no way I'd make them that way now. Instead, I'll add some hickory smoke seasoning to give the taste of bacon. I'm finding myself saving cooking water from pasta and veggies now too in order not to waste any of the good vitamins and flavors. Thank you for keeping up with these Home Economics videos.

    Our cheap bacon here is 4.99 for a 12 oz package... not even a full pound. A pound brick of cheese is on sale right now for 5.49. I get bacon once a month and split it up in 3 packages for biscuits and gravy.

    I’m sure you’re going to get all kinds of “comments” about feeding howie bacon drippings, bacon strips and cheddar cheese. 🙄. I love how you look at what you have and build a meal around it. That’s how I cook too. Shop the sales, stock up when the prices are good, make due with what you’ve got and show your family love.

    I laughed when your Howard asked, did you pepper it. Your Howard and my late Howard love their pepper.
    The mac and cheese with bacon on top sounds so good. I actually like my bacon cooked like that. I also like it crispy, anyway I can get it 🤣👍

    Bacon was ridiculously priced. I bought bacon crumbles. They were expensive but I packagedd in half cup bags. I can use on pizzas casseroles etc. Were not doing bacon at breakfast right now. Have leftover potato soup. Next time we have soup it that with bacon and cheese added.

    Where I live in upstate ny our bacon is running anywhere from 4.99-9.99 per pound and that’s with it on sale! Normally it’s 6.99-11-99/ pound now regular price. A year ago we had it for 3.99/pound regular price. great idea for the evaporated milk, I’m going to try that

    I think you're doing wonderful. I love to see you cook. Plus ya gotta have some feel good food sometime. My grandmother was a diabetic and had to take 2 shots a day. Her doctor told me if I didn't let her enjoy some "good ole southern home cooking" every once in a while, then she would just gorge on stuff when I wasn't home. He was right. She lived a long time after I understood that.

    With how everything is going up in price, my mind thinks of how everything was rationed during the world wars. And yes I am super young but my grandparents raised me and I never thought my generation would ever have this problem.

    I just edited and couldn't find my cheese grater ethier ...I used my veggie peeler it worked pretty good 👍....just thought I'd share especially when u mentioned yr grater was Mia 💓

    Your dinner may seem expensive but, consider what it cost to eat out.
    Making more casseroles we’ll stretch food. I saw the meat at Walmart in Oklahoma and about
    S--- my self. Highway Robbery if you ask me.

      That bacon was bought on sale 5 months ago LOL that's why it was cheap it is now $5 on sale $7 regular not even a full pound

    When my store was closing out bags and boxes of gluten free pasta I stocked up. A lot of it was a $1-$1.50 a pkg and I got bacon and canned it. Now I have something delicious to make with it. Yes, I believe that would be wonderful.
