Thank you so much! Wow you're prepping very early! Yeah, many Anime cafes are only around for a month and then the theme swaps out with something else.
I would recommend you check 'Sweets Paradise' - www.sweets-paradise.jp/collaboration
and Animate Cafe - cafe.animate.co.jp/event/
one month before your visit and see if any cafes you're interested in are coming soon. Both cafes need to have reservations made through their apps or on their websites, you can't just turn up.
Alternatively, best option;
research some general restaurants you'd like to visit which will always have the same delicious menus (much better than anime cafes foods, which LOOK beautiful but don't taste the best.)
Kitatake Udon is the best udon noodles I've ever eaten and it's right in Nipponbashi which is the anime central of Osaka!!

The Collab ended on May 31st, but there's new Collab cafes coming soon I think!
