I imagine that it’s probably easy to get the temps even across if you close the smoke stack on the right side of Santa Maria when using it as an offset. Is that right?
The vertical has inlet caps so you can completely shut the vertical off and use the Santa Maria as an offset. You can really get it as hot as you want. I actually won Grand Champion at a KCBS Backyard event using it that way. Cooked ribs, chicken and pork butts on that side. 1st ribs, 2nd chicken, 1st people choice pulled pork.

Yeah, you can get the temps even if you work with it. I have had them dialed in at 275 no problem.
Awesome cooker. I wonder how high the temp in the Santa Maria will go if you close the exhaust dampner on the vertical? Have you tried it yet?
