    Most of the briskets that I’ve been purchasing lately at Costco are trimmed up very well. I have to cut off a little bit of trim, but not much. I agree with keeping most of it together. You are eating good in the neighborhood tonight. Nice bark on that brisket.🔥🔥🔥🔥🔥🔥🔥🔥🔥🔥🔥🔥🔥🔥🔥🔥🔥🔥🔥

      I see guys trimming them to the extreme which looks pretty but they must have A LOT more money than I if they aren’t grinding or keeping it somehow. 😂 I’ve been real happy with the bark that Sucklebusters SPG has been giving me on everything. Thanks!

    Do you get more smoke flavor from the traditional offset or the reverse flow smoker from Shirley Fab.

      I hate to be the guy that says this because everyone normally says one or the other, but I think it is the same amount of smoke flavor. In my mind, the major difference is capacity. Both of them burn really clean. I think a guy would be happy with either and it just comes down to the “look” they want and the capacity they need.
