I've always loved the combination of sweet shellfish with the earthy pumpkin, and I imagine that the dish was nicely balanced with certain warm spices too, right? One question. Is Chef Bettioui the only one in the kitchen? Actually, this would not be impossible, for Simon Bonwick has been doing it at The Crown at Burchett's Green over in the UK for nearly a decade now, and he has a Michelin star too!
We fully agree with you. The lobster dish was fantastic. The perfectly cooked Tristan Lobster was accompanied by a carrot cream, a pumpkin loop and a fine crustacean bisque. All flavours were focused on the natural taste and only underlined by a bit of acid and cress. Chef Bettioui was indeed the only person in the kitchen. What he prepared for all guest at this evening was absolutely amazing.
@@lesetoiles-finediningstori268 Interesting... Seems like a place where spices might work. But then again, less is usually more when it comes to delicate shellfish, and you can't go wrong with the natural tastes of any ingredient if prepared well. Glad you enjoyed your meal!
