Nice video, cool presenter and nice production with a gentle and easy on the eye style of editing. One suggestion.The presenter needs to slow down his rate of speech by at least 50 percent so that the video is more accessible, especially internationally. About the pizzas, the first one was either cooked in an oven that was either much too hot or the base dough was not good. We could see this by excessive carbonised spots and a very pale base. The second one looked much better, they better understand the wood oven. The third one from Basil was not a pizza. It left the oven without one of the three fundamental pizza ingredients ,cheese. Not a bad idea to add the parma and basil later. He is on the right track though because the sauce and form is good. The base was overcooked. (too brown). Barry's Pizza got it right. Pizza is not only a food, it is also a tradition. The owner made it clear that he respects this tradition and has not tried to reinvent it. He understands and respects pizza and the tradition because he said that they have their Neapolitan originals and their own versions too.Their pizza looked exactly as good pizza should be. The last one from The Dublin Pizza company looked very good but the one shown coming from the oven and being sliced, showed poor oven temperature control and poor form (shape) Don't even think about trying to tell me that it was rustic. They are not long at this so no doubt they will improve. So,that is my review. Who is this guy? ( I suspect you may think.) I am from Ireland but now living overseas.I have more experience in the pizza industry than all of the pizzeria owners in this video combined. I have worked in the Pizza restaurant industry at senior level since 1999 and have advised even Italian migrants about their business. Take my tips on board.I am not slagging anybody. i was in Dublin in 2010 and 2011 had most part only great brakfast and only once nice fish and chips pizzas where mediocre like i see in many videos the food get upgraded in the last years specially meats and pizza,
