Im LEARNING here how to freeze green beans. Brussels... etc. I was TOLD by friends who have been preserving fresh veggies most of their lives that you MUST blanche. And vac seal the bags after. MY EXPERIENCE... I blanched and proceeded to dry beans and put in vac seal bags. The food saver would not seal. Due to the moisture it was sucking out. IRRITATING! I just put the fresh dried off beans in the bags and sealed them. Im GLAD AND THANKFUL that the beans I did will hold up just freezing w/o blanching. THANK YOU
When you decide to eat some of these, do you just open the bag, take out what you need, reseal the bag, and put back in the freezer? I see your vegetable store still offers plastic bags.😲 Maine went paper only July 1st. We didn’t plant a garden this year because we’re selling our house and thought we’d plant a garden at our new house, but we haven’t even put our house on the market yet, it’s very frustrating, let this be a lesson to everyone, plant a garden no matter what and if you move the new owners will have a wonderful feast.
Question: my mother always said she was gonna pick a mess of beans for supper. So, do you prepare an entire gallon for a "mess" or do you just take out what you want and put the bag back in the freezer. I have a few rattlesnake green beans and greasy grit beans plants and since we don't eat alot of beans at a meal wondered if I could freezer mine like that...if I get enough that is.

As a 40 yr hair dresser, scissors are my best friend. I just hold my green beans in bulk with the vine ends together and snip those ends into the bucket then snip the handful in 3rds onto my freezing tray and flash freeze. So oooooo much faster.
I’m jealous of your beans lol. That’s exactly how I put mine up. I’m just starting to get them coming on. Harvested my first handful last night. I only have a 3’ x3’ bed of bush beans right now. Hope to get more planted this week.
Good luck ! Remember when you do your final pick to leave the roots in the ground so they can give back the nitrogen they have stored... You can plant right in and around them...
Believe me, nothing wrong with a 1 pound harvest... Last year, we lost our entire spring planting and I would have loved to have gotten a pound... We recovered with a Fall planting, but even it struggled...
Jealous of the harvest! Just picked some radishes and will pick zucchini tomorrow. Corn is growing strong. Having a bit of a problem with my bell peppers. One plant has already died and a few more have black spots on them....

I usually start taste testing them for firmness at around 15 min... And I get the steamer rolling before I add them...

I think you will find they hold their texture and taste much better this way too...

We try to use the freezer stuff in about 6 months, and the canned in about a year... I am sure they both keep longer though...

They are from the emergency garden we planted to have extras to share... There are 2 rows of green, and 2 rows of yellow, each about 30' long...
I hope I get enough this year to freeze maybe a dozen bags.
This was the first picking from that garden... I am hoping for about a dozen bags as well... And then be able to can from the Fall garden...

Really, corn is about the only thing where blanching is really super beneficial....

Yes... I can just dip into the bags as needed... They do not seem to freezer burn when they have salt in the holding water (before washing)....

Yes... Blanching is more for things like corn that have that enzyme that caused them to prematurely break down... Beans do not have this....

Might try backing off on any nitrogen, try to water evenly, and maybe add some epsom salt...

When you left your beans over night covered in ice and salt, how much salt?
I put about 1 cup of canning salt in with them... It also helps draw the moisture out of them, which helps them maintain their texture in the end...
