    Today, I made Lamington cake, a traditional cake in Australia.
    This cake is made by dipping the soft sponge cake in ganache and rolling it in coconut powder.
    The cake is very moist and soft because of ganache.
    You can use any spread, jam, or butter cream for filling inside.
    Because it is a cute cube-shaped cake, it goes well with the home party.
    I hope you make this cute and delicious cake and eat it.
    ingredient
    *SpongeCake Sheet
    6 eggs (105g yolk, 210g white)
    20g sugar A
    40g of corn syrup
    120g sugar B
    120g of flour
    55g of oil (grape seed oil, avocado oil, canola oil, etc.)
    1 teaspoon vanilla extract
    *Ganache
    200g of dark or milk chocolate
    100g of unsweetened whipped cream
    *Others
    Chocolate Spread
    coconut powder
    안녕하세요.
    오늘은 코코넛가루가 하얀 눈을 생각나게하는 크리스마스에 잘 어울릴만한
    레밍턴케이크를 만들어보았어요.
    레밍턴 케이크는 호주의 국민케이크로 불릴정도로 호주사람들이 많이 먹는케이크에요.
    폭신폭신한 시트를 가나슈에 푹 담구었다가 코코넛가루를 잔뜩 묻혀먹는 케이크인데
    스펀지케이크 시트가 가나슈를 살짝 흡수해 정말 촉촉하고 맛있어요!!
    코코넛가루의 식감과 향도 정말 잘 어울려 주변에 선물해주니 반응이 아주 좋았어요!
    큐브모양으로 작게 만들어진 케이크가 귀여워 홈파티 메뉴로 내놓아도 아주 좋을거에요.
    가운데 들어가는 필링은 과일잼이나 여러가지 스프레드.버터크림까지 원하는대로 넣으심 되구요.
    그럼 맛있게 만들어 드세요^^
    재료(5cmx5cmx5cm 큐브케이크 12개분량)
    *스펀지케이크시트
    계란 6개(노른자 105g,흰자 210g)
    설탕A 20g
    물엿 40g
    설탕B 120g
    박력분 120g
    무향오일(포도씨유,아보카도오일,카놀라유등) 55g
    바닐라익스트랙 1티스푼
    *가나슈
    다크 or 밀크 초콜릿 200g
    무가당 생크림 100g
    *그외
    초콜릿스프레드
    코코넛파우더
    레시피
    1.계란 6개를 흰자와 노른자로 분리시켜주세요 노른자 105g흰자 210g)
    2.노른자에 설탕 20g과 물엿 40g을 넣고 머랭을 만들어주세요.(밝은 아이보리색이 될때까지)
    3.분리해둔 계란흰자에 설탕 120g을 여러번 나누어넣으며 머랭을 만들어주세요.
    4.노른자 머랭에 흰자머랭 2/3를 넣고 섞어주세요.
    5.박력분 120g을 넣고 가루가 보이지 않을때까지 흩뿌리듯 조심스럽게 섞어주세요.
    6.남은 머랭을 모두 넣고 섞어주세요.
    7.다른그릇에 반죽을 조금만 덜은 후 무향오일(포도씨유,아보카도오일,카놀라유등) 55g, 바닐라익스트랙 1티스푼 을 넣고 섞어주세요.
    8.본반죽에 넣고 다시 잘 섞어주세요.
    9.팬에 반죽을 붓고 반죽 위면을 평평하게 정리 후 충격을 주어 기포를 제거해주세요.
    10.150도로 예열된 오븐에서 25분간 구운 후 완전히 식혀주세요.
    11.케이크를 반으로 자른 후 스프레드를 바른 후 나머지 반으로 덮어주세요.
    12.냉동실에서 30분간 굳혀주세요.
    13.다크 혹은 밀크 초콜릿 200g에 따뜻하게 데운 생크림 100g을 넣고 가나슈를 만들어주세요.
    14.케이크를 정사각형으로 자른 후 가나슈에 담구어주세요.
    15.코코넛가루에 굴린 후 초콜릿을 굳힌뒤에 드세요.

    As an Australian, I appreciate it! Even though it’s a different process. A tip: freeze the cake for 30 minutes to make coating in icing and coconut easier.

    하하 너무 가고 싶은 곳 붙고 첫 면접에서 제대로 망하고 집에 가는길에 펑펑 울면서 보고 있어요... 제 맘 어떻게 아시고 딱 달콤촉촉 초콜릿 케이크를 ㅠㅠ 두꺼운 오예스 같아요. 칼로리식당님은 역시 제게 엔돌핀이예요. 레스큐어 생크림 한번도 못먹어봤는데 밀락이나 골드라벨보다 맛있나요?

      제가 말주변이 없어 위로가 될만한 멋있는 말은 못쓰겠지만 저도 그런 경험이 많기때문에 공감은 충분히 해드릴 수 있어요! 고등어님 댓글보면 시험준비로 항상 바쁜 일상을 보내고있으신게 느껴졌는데 그 노력 꼭 보상받을 수 있는 좋은 날들이 있을거에요. 우울한 기분은 맛있는거 먹고 다 풀어버리고 다음 면접 그리고 앞으로 있을 모든 면접 다~~~ 잘되길 바랄게요.+ 그리고 레스큐어생크림은 요즘 최애크림이에요. 다른 크림보다 휘핑도 더 잘 올라오고 고소한맛이 더 강하더라구요. 레스큐어 버터먹고 맛있어서 생크림도 사봤는데 정착할것같아요ㅎㅎ 밀락은 동물성+식물성 섞인것이고 골드라벨은 식물성크림이라 이 두가지보다 훨씬 고소한 맛이 나요. 대신 작업성은 떨어져서 아이싱하기는 힘들거에요ㅠ

    밀크100 다크100 + 생크림100 했는데 초콜릿이 영상처럼 흐르는 정도가 아닌 조금 꾸덕해서... 원하는 느낌으로 초코가 스며들지 않아서 힘들었습니다. 원인이 뭘까요... ? ㅠ
