Daz, I have dehydrated without blanching and the carrots looked washed out and unappetizing. I blanch many of my veg now to keep the colour in. Not herbs and not fruit, but all my root veg get blanched. YeeHaw from the Great State of Texas 🤠
Hey Daz! Definitely agree with the blanching. We have dried carrots that just browned. Still fine to eat but maybe want to eat them with your eyes closed… 😂 You have reminded me that I have kale to dehydrate. Great video! Take care, Annette 🌺

This is interesting, being carrots fresh, you buy only what you immediately use but this way, you have them ALWAYS on hand, and once rehydrated, differ none in appearance and taste as well! Oh my goodness. When I see a mandolin like this I see what happened to Jeremy Clarkson in one of the episodes of Clarkson Farm. 😳😳😳 Im a non blancher for carrots. But they dont rehydrate as well as yours did in this vid. So perhaps I should!!!

G'day! I am doing well thanks. Ah, yes, I was going to explain that and forgot. It's because some of the carrots moved upwards and were exposed to the sun. Imagine how a potato goes green if left out in the sunlight too long... Same thing. They taste the same to me and I assume shops don't sell those ones as they don't look right. Is it possible to dehydrate vegetables and rehydrate them so they still have maximum crunch and freshness to use in salads. Do I use the method you showed in this video or a different method? Your advice would be greatly appreciated.
G'day! Hmmm.... I've not rehydrated many things for salads. I mostly do it for cooking. I have rehydrated chilies and jalapenos and they had a soft, but acceptable texture. As far as vegetables go, I blanch mine. You can see in the video that the carrots are still firm after blanching, chilling in ice water, dehydrating and rehydrating later. If planning for a salad and it was a hard veggie like a carrot, I would dehydrate them raw. I just don't do them for salads and don't dehydrate veggies raw, so I really can't speak enough from experience unfortunately. I'm sorry. Thanks so much and good luck. Daz.
