Behind the Scenes: Halo Top Creamery and Gatsby Chocolate

Join Doug Bouton (Law '10) and Andrew Mellen (Law '10) to hear their trials, tribulations and rewards of running two popular dessert brands: Halo Top Creamery and Gatsby Chocolate. Bouton joined Halo Top in its early days and helped take it from virtually nothing in 2013 to the best selling ice cream in the U.S. in 2017. After leading the sale of Halo Top in 2019, Bouton partnered with Mellen and founded Gatsby Chocolate in 2021. Gatsby Chocolate - effectively the "Halo Top" chocolate bar - was featured on Shark Tank in September 2023 and recently inked a deal with the Cavinder Twins.
Bouton and Mellen will talk about the innovation that went into the product development of Halo Top Creamery's low-calorie ice cream and Gatsby Chocolate's low-calorie chocolate as well as the growing pains & lessons learned of doing it the second time around.
