Sim is difficult at first but once you get your controls set up, I suggest spending a lot of time in test flight to play around with the controls and planes you plan to fly. Top tier is a lot easier to get into due to SAS controls (fly by wire) system. Props is more difficult due to different planes being very different in terms of flight performance etc. Sim does require a bit of practice.

I cant tell if the contrast is right the way up or your recording in like 480p and trying to upscale

No, I play on mouse and keyboard via relative control which gives me the ability to fly with wasd for my elevator and ailerons.
I should try it, for now, i use mouse, and its awful in sim
