Made these tonight! Of course tweaked it a little, added a bit of tomato sauce, it was a hit. I made 1 pan of cheese and 1 pan of chicken, soaked the chicken in some of the sauce and assembled. Great recipe! 👌

It's been years since I've used this mole recipe taught to me by my mom ♥️ it brought back many memories of stuff ground beef and cheese enchiladas. She also added sliced olives inside and for garnish. This same recipe was also used for chicken and mole
I just made this sauce. The first time I forgot to cook my flour all the way. I added all the spices and the water so I started it again. This time I cooked it all the way and cooked it for a while and it came out delicious. The first sauce I had used New Mexico chili powder and it was super red. The second time I used California and it came out lighter but delicious
Avoid using chilies or chili products from Hatch or most areas in New Mexico. For some reason, most all appears spicier, more picante, aka chiloso. We lived in So. Arizona for over 17 years. Most there, avoid NM chilies.

May make these tonight. I have alot of leftover cheese from making pizza. I usually make a tomato based sauce with chipolte in adobo and my roommate makes green salsa. I love them both. Am now trying yours but I don't have chili powder. Can I use smoked paparika, cayenne pepper, with onion powder and garlic powder? I have a bit of steak too. Super thin cut. May cook it quick and chop it into tiny pieces and add it to the cheese..

I love this recipe, but through trial and error, I now kind of "cheat" and make it a casserole rather than rolling the individual enchiladas. The reason is because when I serve it, I can't quite get the enchiladas to come out individually, and I end up getting part of an enchilada and the result is, I may as well had made it a casserole. It's OK because the flavor is definitely still there. And I find that the prep time is much less, so I can get dinner on the table quicker.

I actually eat low carb and I make a lot of chicken, veggies and Mexican style cauliflower rice. I also use butter lettuce leaves for wraps and tacos. The other day I made chorizo and egg then used a cheese wrap as the tortilla. 😬

I suggest you consider making only the sauce to freeze in advance. You might now enjoy frozen enchiladas that were already assembled when you reheat them. They’re likely to turn out like “frozen Mexican T V dinner” taste and texture.

I wouldn't use the cayenne. To spicy and does have the deep flavor that regular chili powder has.
