  • In this tutorial I demonstrate how to createan easy peasy 2 tier cookie cake decorated with fresh flowers.

    Chocolate ganache recipe:
    400 grams dark chocolate
    200 grams heavy / whipping cream
    microwave for 30 seconds and stir until melted. You may find that you need to return the mixture to the microwave for an additional 10 seconds, then stir until all is combined and melted.
    WHITE CHOCOLATE:
    I melted white chocolate with a touch of vegetable oil (approximately 1/4 cup of white chocolate for each colour, added in one to 2 drops of gel food colour and about 1 teaspoon of vegetable oil so it doesn't seize).
    The bottom tier was a red velvet cake and the top tier was a marbled white and dark chocolate mud cake.

Colours I used ar the Americolour airbrush range white was a soft pink and a soft blue, the exact colours I will list once I am back in Australia and have access to my little collection.       Thank you Sumaya! :) I have a few sturdy recipes you can refer to in my Dessert Recipe playlist, I would recommend the muds or the butter based cakes as they are denses, heavier and hold shape well under fondant and the weight of layers. Sponge cakes and soft cakes are generally not recommended under fondant or as tall cakes as they mishape easily and don't hold so well under the weight. Hope that helps you in the meantime! :)

    Hi Rosie! I love your cakes, they’re absolutely beautiful! I’m going to be making a cake inspired by you for our county fair this summer, I was wondering if I needed to do anything special to keep everything the way it was when I first make it. The judges don’t taste to cake so it’s just how it looks, would the buttercream melt? The fair usually lasts about a week so if I follow your directions would it last that long?

      I would recommend using styrofoam cake dummies for the event rather than real cake. Real cake on the inside won't last the week, it will begin to sag and misshape. Buttercream can last a fair while, however at room temperature it might discolour and develp an odd texture. If you can, try using royal icing instead for the frosting and the drip. This will hold it's shape, colour and flawless look all week long.

    one request....would you ever be able to show us how you make and bake your layers? They always look so thick for being cut in half! I use 3" pans, and have trouble completely baking through if I want talker layers. Thanks! And scrumptious and fun looking cake!

      Hi Lynn, thank you for your request :) I also bake using 3 inch tall cake tins. The trick is to fill them almost 3/4 of thee way and then cover them in alluminium foil and bake them covered with the alluminium. They rise super evenly and cook through beautifully without crusting or cracking at the top. works every time! but I can do a video demonstration of this in future all the same, I have been asked a few times :)

    Hi Rosie, great video as usual! I always have a bit of trouble with the chocolate flags. I find they start melting as soon as I put them into the cake. I live in the UK so it certainly isn't too hot!. Any tips?

      Hi Tamaki, Faith is on point with this particular cake :) if they are not for clients then I normally give them away to friends and family as nobody eats cake here at home anymore... I have destroyed their love for this dessert lol I make too many too often.

      Hi Mariella, thank you very much :) My cakes are usually 4/5 to 5 inches tall after filling and covering in buttercream. As a two tier, they usually reach 10inches in height all together.

    How do you transport the two tiered cakes without damaging them, as they are much taller than the average cake, owing to the fact that they are done as one...then decorated . Normally I have had separators between the layers so each can be boxed separately....any help, ideas appreciated. Thanks Ethne UK

    If I put the cake in the freezer after making it, how long do i need to wait before start icing it?

      Hi hun, Once the crumbcoat is applied I pop my cake into the freezer for about 10 minutes and then start decorating :)

      aww Martha!!! haha. I have basic recipes on my channel, just in the playlist section. These cakes however are by a brand called Bakels :) just about every bakery uses this.

      hi there, yes that's correct. I bake my cakes in 3 to 4 inch high cake tins.

      Hi Gijsje D, I use a regular buttercream recipe but add in half cream cheese and half butter instead of all butter. It tastes beautifully of cream cheese frosting but with the added stability and stiffness of regular buttercream :) (250 grams cream cheese, 250 grams butter, 1kg icing sugar, 1 teaspoon vanilla extract, 2 to 3 tablespoons of milk or until you have the consistency you need)

      Hi hun, yes you can :) if this is the case, I would recommend keeping the stacked cakes refrigerated until the event, just to make it more stable.

    Can anybody help me? On some channels I see they use simple syrup. What is the use of that and do you really need it if you want to serve your cake 2 days after you bake it?

      im no expert, but I would suggest using it. It helps keep the cake moist. It's just one part sugar to one part water, brought to a boil and then cooled - theres tons of recipes on youtube! :)

    Why is the purpose of placing the straws in the cake ?

      Hi, the straws are there to support the weight of the top cake. If you don't add any dowels / "support beams" the weight of the top cake will crack the buttercream of the bottom cake and it will eventually cave in :)
