I've just recently started using chili crisp a little bit and gotta say, I'm really liking it - I love shrimp (scrimps we call 'em in my house) and I think my wife would LOVE this dish, as well. I know you said it's a quick dinner, but obviously there's some prep you gotta do - like the shrimp cleaning, and toasting the chilis to make the chili crisp, etc. The final dish may cook quick - but you gotta be ready for a quick cook with all your stuff ready to go. I'm with others in cringing a bit about eating the shells and the heads - I'm just not sure about it. I may be willing to give it a try, but I know my family will not. lol

Nice recipe. Although you can't use it here, if you ever do another recipe which you will buy head on shrimp but don't plan to use it, save it. If you happen to de-shell before cooking, save the shells. Then use those head and shells and make shrimp stock. I got some huge 6-8 size shrimp once and they even still had some shrimp "butter" in the heads so I saved those, steamed it and add some chopped shrimp after I boiled it to make a great toasted bread spread.
My favorite thing to make on a kettle is pork spare ribs with just enough trimming, nothing serious; pork belly as well as dino/beef ribs. Sometimes a small briskets that look good. To be honest a kettle rib video would help all the people. It's kettle season and you should capitalize on that.
I think that Korean newspaper can do miracles on your pit with a leg of lamb or goat. Get the leg marinated in full Greek yoghourt mixed with garlic, tomato paste and ras-al-hanout seasoning for that Middle East flavour. Or what about a nice piece of pork neck, butterfly it and stuff it with green pesto, some spinach leaves, grilled pine nuts and thin slices of panchetta with your own personal twist. Or a fabulous risotto with gochujang as flavour bomb along with a nice steak And last but not least conchiglie pasta filled with pulled pork for example.
@@knoxavebbq nah, leave that to the experts :) love to experiment in my backyard with different flavour profiles but leave the video stuff for content creators. I like to watch the usual BBQ TH-cam channels but after 2-3 years do I notice my hunger, sorry for the expression, for more gourmet like dishes. Seems US BBQ chefs are like afraid to go that route or perhaps is the audience just getting all excited (corrected a word here ;) ) to see another brisket or ribs video and lack imagination ;)
