In this game when your artillery ran out of ammunition, it counts as you no longer have artillery in your army, so the AI will switch from rush mode into defensive mode. We can work around this by saving just 1 ammunition left on 1 of the cannon, so the AI will keep running at you.
Newbies dont get that artillery isnt for kills, but to make the other guy come forward and to break through in critical spots. Using armstrong guns the way the way it was done in the video is such a waste.

One thing I've noticed in FOTS is that the enemy AI will prioritize your high quality units over lower quality ones to an absolutely silly extent. So if you use a layered defense formation, with Levy Infantry in the front and Line Infantry at the back, the enemy will continue to rush forward until they're within range to shoot at your line infantry, allowing both your line infantry and levy infantry to shoot at them. But if you have two rows of line infantry, there's no quality disparity between them, and so the AI will stop once they reach your first row of line infantry and fight them; whilst staying out of range of your second row.
Shogun 2 in general is special in the way that every unit, even early one can still have some use even later in the campaign, like yari ashigaru. Sure with good economy you can field samurai armies, but realistically most battles would involve loads of ashigaru's with only couple of samurai on each side. Doesn't help that historical records are inconsistent and there were no standards, as each clan did it's own thing. Median was calculated that around 20% was samurai. It varied widely, so take it with grain of salt.

Full disclosure this is just my theory from playing again recently: Units that make it to the edge of the map will usually survive unless they are completely shattered and with very low strength left, the difference with a large chain rout like this is that most of the units were in the process of routing, still on the battlefield when he clicked the end battle button. A longer lasting fight where individual units break and can escape is more likely to have leftovers
He did use it briefly when skirmishing with his sharpshooters late in the battle. But I wonder if he avoided it because it breaks units rather than killing them and with this many stacks at once it's ideal to kill as much as you can.
