Healthy Low-Calorie Chocolate Cheesecake: Easy Dessert with Cottage Cheese, Yoghurt & Dark Chocolate

- 🍫 Healthy Chocolate Cheesecake: So Good You Won’t Miss the Calories
🔥 Yields: Approximately 9 servings (exact number will depend on the size of your ramekins).
🕒 Prep Time: 15 minutes | Bake Time: 40-45 minutes
✨Ingredients:
500g (2 tubs) low-fat plain smooth cottage cheese
3 large eggs
190ml (¾ cup) sugar
5ml (1 tsp) vanilla essence
10ml (2 tsp) lemon juice
Pinch of salt
175ml plain low-fat yoghurt
50g dark chocolate
40ml (3tbsp) cocoa powder
3ml (½ tsp) instant coffee
45ml (3tbsp) warm water
💡Tip: For a lower calorie option, you can use fat-free cottage cheese and fat-free yoghurt.

With fat-free cottage cheese and yoghurt: ~160 calories per serving.
✨How to Make Low-Calorie Individual Chocolate Cheesecakes
1. Blend the Cheesecake Base:
In a blender or mixing bowl, combine 500g low-fat cottage cheese, 3 large eggs, ¾ cup sugar, 1 tsp vanilla essence, 2 tsp lemon juice, 175ml plain low-fat yoghurt, and a pinch of salt. Blend or whisk until smooth and creamy.
2. Prepare the Chocolate Mixture:
Place 50g dark chocolate in a microwave-safe bowl.
Melt the chocolate in 30-second intervals, stirring in between to avoid burning.
Once melted, stir in 40ml cocoa powder, ½ tsp instant coffee, and 45ml warm water. Beat until the mixture is smooth and glossy.
3. Combine the Mixtures:
Gradually pour the cheesecake mixture into the chocolate mixture, stirring continuously until well combined.
4. Prepare for Baking:
Preheat your oven to 180°C (350°F).
Divide the mixture evenly among individual ramekins.
Place the ramekins in a deep baking pan and pour hot water into the pan until it reaches halfway up the sides of the ramekins.
5. Bake and Cool:
Bake the cheesecakes for 40-45 minutes, or until the centers are just set.
Remove the ramekins from the water bath and let them cool to room temperature.
6. Chill Before Serving:
Refrigerate the cheesecakes for at least 12 hours to allow the flavors to meld and the texture to set.
