Is there any kind of marketplace in the US for finding local farms? We have one in Australia called Farmer 2 Fridge. I've been able to get half a cow from a farm 2 hours from me and they delivered too. Unfortunately (or fortunately, depending on how you look at it!) we used up our beef in only 3 months. So I need to scrape together some money and buy another one!
I wasn't going to, but since someone in the chat chimed in... A calf is a younger than one year old "baby" bovine. A heifer is a young female that has never given birth, but also if she has only given birth once. A steer is a neutered male, of any age. A bull is an adult male, not neutered. A cow is a female that has given birth at least twice. I honestly think everyone understands that when you say that you bought a "cow" that you mean you bought a full animal. It really doesn't matter what sex. The only time that really matters is when you butcher an well aged adult, because they tend to be much more muscular, therefore tougher meat. This back and forth with specific definitions is getting out of hand. There are times when it matters, but too many people are getting entirely too adamant about it.
