It's like your soto ayam. Same type of noodles and also uses chicken. But the Philippines uses anatto seeds for coloring and flavor, which is why it's colored red.

Never knew sotanghon was a street food. My life is a lie! 😂😂 it's more of a comfort food for us here in the south. And I haven't seen it sold as street food even in the Visayas islands. Or maybe in the places I've been to.
Even here in northern luzon. I haven't seen people treat sotanghon as street food. Baka maging ulam dito sa amin yan

Medyo mahaba kasi history ng pancit/noodles sa Maynila bunga na rin na andun ang Binondo. Nung nagresearch ako dati ng mga iba't ibang noodle dish ng Pilipinas, pinakamarami nanggaling sa bandang Maynila at mga karating lalawigan. Kaya ganun siguro. hahahahha. Dito samin ang uso naman na street food na noodles, Pares Mami.

One day, I'll go back to the Philippines, go to Manila to eat sotanghon soup. We used to eat this in the market. Wondering what part of pork are they using. Do you use achuete for the soup that's why the color is so beautiful? This will be in my to do list when I go on vacation.
