I'm a first year apprentice chef. I challenged the fastest oyster shucker in our restaurant to an oyster shucking competition.
When I first started it took me 30 seconds to shuck an oyster.
Then after a lot of practice, a few thousand oysters later. I got it down to 15 seconds an oyster.
I kept practising, really focusing on quality over speed.
Got it down to almost 10 seconds per oyster.
The guy I challenged said to me that he once shucked 26 dozen oysters in 30 minutes.
So my goal is 5 seconds an oyster. I'm averaging about 9-10 seconds right now, but I'm really pushing for smoothness and refining my technique to reduce the variance of my time.
My goal is to hit 5 seconds per oyster in about 2 weeks. Call that an unrealistic goal.

This Quarantine has afforded me the time to really explore some new recipes and I've fallen in love with cooking! Rediscovering your channel in a new light! The time aspect is HUGE- I cannot believe how much time has passed when I eventually do look at the clock but I appreciate the state of flow and the level of focus I achieve in the kitchen. And as you said- the results are so rewarding!

This is awesome! You’re right about flow, it’s a cool feeling once you build enough skill that things start to become subconscious and you can get into a rhythm, sorry for the late reply I took a break but coming back soon. Thanks for the support ♥️

There are some good tips here. For me I have made good use of time in the kitchen in recent years. I've learned to use the spaces in between waiting for oil to heat up, one component to cook before moving on to the next, ect. In those in between times I definitely clean up along the way, stage platters to move cooked food off pans/the grill/oven, prep any additional ingredients and the like. It really helps in the end, especially with regards to clean up. Even if I am just cooking for myself, the kitchen can look like a shit storm afterward. I don't like to feel rushed and crazy if I can avoid it. It's a dance.
If you don't have merch already, I feel like you should include "Don't Be A Nightmare" in the verbiage. Profanity optional.

Yes yes yes to all aforementioned things. You’re a true cook miss and I appreciate the support. “WAFN” merch will eventually be a thing lol

I commented without finishing. Most advice is opposite this - realistic vs unrealistic. I do like seeing things as a game, but I don't do it enough. Ex. So many people don't like driving. But that naturally came as a game for me and I'd say, I'm pretty good chill driver.

Remember that one time…. We were making cranberry vinaigrette…… in English accents……. And chef Scott was yelling at Jarred about the giant mess he made in the floor……

Speed comes with practice and repetition. It's better to learn the correct and safe techniques before worrying about how fast you're going.
