I found your you tube site by chance last night looking for a recipe how to make a Rye loaf of bread in Grams. I'm just starting to learn to make bread and have made a lovely Rye starter and have never baked with it yet. Fed it today as I keep it on the counter and feeding it everyday since 2 months it looks so lovely today all full of strengh and ready ,giving me winks as to say,here Iam i am ready but where are you.Alas I don't know what recipe to use to make one loaf. I have organic rye flour a lovely 10O percent hydration rye starter of 2 months fed everyday. I am trying to bake real bread,Danish pastries,kouign amann croissants everything that you find in a home bakery. I wish that I was younger to have learned how to be a good baker,as I know that it is with time and experience and also to be gifted and most of all too to love to bake.Blessings for all you do and share.

Epic pretty much covers this one. From the semi sized oven to the mixer with a 1.5 meter dough hook. The breads were all beautiful.

You're correct, it's a very wet rye that is going from the mixer directly to the loaf pan for final rise. At 1:42, he is just smoothing the top.
