Always freeze the cake pops for at least an hour before dipping! It helps the cake ball stick to the stick, so your cake ball doesn't fall off! That's the only complaint I have about this video. They look great!

But you don't want the cake to be to cold though cause it hardens the chocolate quicker as well cause cracking

Paramount crystals are great and a nice upgrade from the Crisco I've been using for awhile now. I've been using Wilton Candy Melts cause they are easy to get (Michael's is down the street), but I'm thinking about "upgrading" to something like Merckens. I'll never understand why every batch handles differently. Sometimes I have great batches, some just suck. Everything impacts everything; is it too hot today or just cold enough? Did I cool the melts enough? Are my pops the right temp to dip? Which one is going to be the first to fall off the stick? Agh! I just keep at it and folks haven't complained so far.

Later on, you will probably want to experiment with something else and it won't be so frustrating at that point. I have a question I have to make 75 cake pops. For July 18 she wants white and black for the graduation. How do I get black candy melt. And do you you put your cake pops in the fridge for bit before dipping. I usually make a half sheet cake then crumble my cake in my food processor. How much frosting do you add to your cake to hold. Your cake pops looks smooth. I put all my melted chocolate in a glass for dipping.
    Thanks Kristin

I used to use Canola oil to thin the chocolate out but now I use coconut oil, to me it enhances the taste and can be used with non dipping chocolate as well
