To my understanding, the verb ser (soy) is mainly permanent. So for example being an artist is a permanent quality. On the other hand estar (estoy) is can vary more. So if I asked how are you that could change from day to day. For example one day you are happy while another you are sad, that is why estar (estoy) is used. Hope this helped :)

I'm no expert, but I've only heard someone say 'yo [name]' after someone else said their name. Ex: Persona 1: Me llamo Señor Jordan. Persona 2: Yo, Dolores. Or something to that effect. Where did you learn that? Also, I always encourage my students to use the verbs when in doubt. Complete sentences are always better when learning. Also, you're a chica, ¿verdad? My spanish teacher have told me, that you dont say - Yo soy, but soy. That you only say yo soy when you have to truly say some big or importent thing about yourself. :)

Some things have more flexibility than others... 'bastante' is modifying 'paciente' so it must go in the same place (before). 'A veces' is modifying the whole sentence, so it could go in many places and sound ok.

At 4:56 after you say, "Yo soy bastante paciente", you say some something after that right before you say "Entonces". What is it that you said? My reading and writing skills are pretty decent, but I am lacking in hearing and understanding when its quick or when I not following the context of a conversation.

You can just say "No soy"... the "yo" is used for emphasis and or clarification.

Different places have different accents. The pronunciation of 'c' and 's' as you describe occurs in Spain predominantly. ;-)
