I still remember one of my first days in SS13 when I was waiting in Medical for treatment and some random guy walked up to me and gave me some water. I shrugged and drank it. He then force fed me a potassium pill when I wasn't looking. I immediately exploded into a red pile of goo and just sat there staring at the screen.

I never tried an instakill but I only sabotaged once. Was a two man mission with my brother and I decided to take a mission to transport clown stuff. My brother complained and was talking shit so I subtly bought a Husk parasite and when we were deep into the mission I left the helm, put on a clown outfit and injected him with it. Eventually he realised what was happening and attacked me. Thankfully the Ai security stunned him and I locked him in a room and took his id card and watched as he succumbed to the parasite before crashing the sub into a wall and shooting the security guy in the face . . . I then restarted the mission to play again but it was still fun

Well when hosts do use logs they can't really fucking do anything except taking a few resources into their inventory and dropping it into the ocean. Hell, simply putting "I check server logs" in the description pretty much removes griefing or trolling from the server since most people who use logs use it to create the totalitarian police state that you are mentioning.
Too bad now there is CD for injection. You can still try to stab people with multiple pomegranate extract to kill them but most of the time the run off before you can inject the full dose. Or, you can just put a welding fuel tank/incendium fuel tank in a diving suit, where it gives +20 oxygen low PER SECOND (incendium just gives 3 burn per second on top of that), meaning that you can just replace an air tank with a fuel tank in a diving suit, then put it on a crewmate to kill them in seconds. This works with ALL diving suits (and even exo suits) but does not work with diving masks. This information is pretty important considering how you can replace the fuel tanks of ALL diving outerwear with welding/incendium fuel tanks and enjoy as your crew start falling over and dying in SECONDS with no idea what happened if they decide to quick-equip the suits instead of holding them first to check whats inside of them.
